The quintessential Eat Out of the Fridge/Pantry recipe just might be The Cobb Salad. After all, as the story goes, that’s exactly how this world-famous salad came to be back in 1934. Bob Cobb, owner of the legendary Hollywood Brown Derby restaurant, got a midnight hankering for something to eat. Midnight snacks can be some of the best meals. Anyway, he went pilfering through his restaurant’s industrial sized refrigerator pulling out a variety of leftover ingredients (hard-boiled eggs, lettuce, avocado, tomato, cooked chicken, blue cheese…) and proceeded to chop them into a massive salad. He snagged a few slices of crispy bacon from a line-cook on his way out. The Cobb Salad literally became an overnight sensation.
I’ll present it to you like I did earlier tonight.
How about a salad for dinner? A great big Cobb Salad. A bed of crisp iceberg & romaine lettuce topped with rows of juicy herb grilled chicken, perfectly cooked chopped hard-boiled eggs, diced creamy ripe avocado, thinly sliced scallions, blue cheese crumbles, diced garden tomatoes, and deliciously crispy crumbled bacon.
Or if you prefer we could have…. I was interrupted, “No! Nope. No need for more options, you had me at great big.” Do I know how to sell a salad or what?! :)

And make no mistake about it. This Cobb ‘Salad’ is a meal. The perfect summertime supper. Preparing ingredients ahead of time, will make this salad the best thing you’ve come home to in a long time. Just wait to dice eggs and avocado until just before serving. Enjoy.
The Classic Cobb Salad
Ingredients
- 6 strips bacon cooked until crispy
- 2 cups cooked chicken breast cubed
- 3 cups chopped iceberg lettuce
- 3 cups chopped romaine lettuce
- 2 med. tomatoes diced
- 3 hard-boiled eggs diced
- 1 avocado diced
- 4 scallions thinly sliced
- 1/2 cup blue cheese crumbles
Instructions
- Spread chopped lettuces on a large platter. Top with rows of remaining ingredients.
- Serve with favorite dressing.
