Mexican Chicken Soup {Share the Love}
Mexican Chicken Soup has become a comfort food staple for my family. Every time we have it, whether at our favorite Mexican cantina or at home, we’re reminded how wonderfully delicious this soup is. I realized recently that comfort food didn’t have to come in the form of a casserole or laced with chocolate (although for me personally those are way up there on my list). And that chicken soup didn’t have to include noodles for it to warm your soul. With a short list of ingredients, starting from scratch, you can have it on the table in 15 minutes or less. A wonderful Monday evening bonus!

Thrift Store Find Romertopf Clay Baker {Score}
Those of you who know me well, know that I visit thrift stores on a frequent basis. Most often I’m not looking for anything in particular….more like it’s looking for me. I truly find it therapeutic to scan through shelves of books and dishes and well dishes mostly. I’ve experienced the same thrill I felt today on several occasions but it’s been quite a dry spell for me. Today, however…..SCORE.

Apple Pancakes with Brickle Butter {Sundays with Shelby}
This beautiful bright Sunday morning began just a wee bit earlier than we had planned, following a wonderful late evening birthday celebration with family (a now monthly “tradition” for us). Side Note: I believe you can claim something as a tradition when it happens three times.That’s my theory at least and we’ve actually completed the first full year rotation. So yes, this is now a tradition and one I personally love and look forward to each month.

Watermelon Gazpacho & Tropical Watermelon Soup with Peach Purée {Share the Love}
Passion. Someone once said to me “I’ve been trying to put my finger on it when people ask me to describe you. And the word that comes to mind is passion.” And so we will credit that very ‘passion’ with turning the discovery of National Watermelon Day into a full out watermelon event at work today.

Quinoa Salad with Fruits & Citrus ~ Quinoa Salad with Crisp Summer Veggies {Sundays with Shelby}
A family tradition seems to be forming here. Sunday’s with Shelby. I like it. It’s a chance for me to dabble with recipes that will entice my kid to get out of bed and head my way. She is becoming a wonderful cook herself and now brings us samples of her latest culinary creations. Today we exchanged Quinoa Salad recipes.

Caramelized Onion & Zucchini Quiche {Sundays with Shelby}
As I’ve shared before I may have a slight addiction to cooking magazines. And recipes that feature fresh healthy ingredients always catch my attention. My most recent Cooking Light magazine offered this Caramelized Onion & Zucchini Quiche recipe that not only fit the ingredients currently in my kitchen but was a perfect get-my-kid-to-come-for-brunch dish (I’m not above bribery and food seems to work quite well with her).

Not Just Any Saturday Adventure…
We’re approaching the second anniversary of my mom’s passing. I think about her every day and know she, the writer, editor, story teller, photographer would have been a masterful blogger. Every Saturday for many years we would set out on Adventures. While some folks would have simply labeled these outings as running errands….they were much more than that to us.

Steamed Asparagus with Fried Egg & Shaved Parmesan Cheese. Cappuccino got her here….but this dish kept her at the table. My daughter favors vegetarian dishes and because of her I’m drawn to recipes that I know she’ll enjoy.

Irish Cream Cappuccino with Kahlua Cream
Irish Cream Cappuccino with Kahlua Cream. On the top shelf of my coffee mug cabinet in the far back corner sits one of many gadgets my mom just knew I should own…..a Cappuccino Set. On this day I shall use it to entice my daughter to come have coffee with me.
