The Jarlsberg BLT with Fried Egg
At our last family pot-luck gathering, my sister-in-law brought a crock full of the most glorious cheese dip. Jarlsberg Cheese Dip to be exact. She served it cold with a sliced baguette. I’m sure I never let it out of my sight or reach for the entire evening hour before it was devoured for it’s heavenly goodness. She shared that she had bought this tub of love at her local Kroger supermarket. I promptly sought out the closest Kroger and bought 2 tubs (plain and jalapeno) and a baguette.

Sage Brown Butter Buttermilk Cornbread {Happy New Year}
It’s New Years Day and we, like many, will be enjoying Black-Eyed Peas and Cooked Greens, hoping for a little luck and good fortune in the new year. We’ll also be having Sage Brown Butter Buttermilk Cornbread, hoping for a little extra love ;).

Huevos Rancheros {Kind Of}
While these aren’t near authentic Huevos Rancheros, they are a nice twist on those wonderful Mexican Ranch Eggs. I tossed onion, zucchini, and cherry tomatoes in olive oil, oregano, salt and pepper and then roasted them for about 20 minutes until the onions were tender and the tomatoes began to burst. This mixture took the place of the traditional tomato-chili sauce and refried beans. You could substitute with whatever fresh veggies you have on hand, after all this is eat of the fridge/pantry week.

Bacon, Egg, & Cheddar Cheese Biscuits {Sundays with Shelby}
It’s been too long since my last Sundays with Shelby outing. Today I’ve come up with a sure fire way to entice her for breakfast. We recently made Cheddar Buttermilk Biscuits {Red Lobster Inspired} and they were delicious on their own. We’re going to elevate the game by building a classic Bacon, Egg & Cheddar Cheese Biscuit out of them. Oh Shelby your mamma’s calling…

Pumpkin Rum Muffins {with Maple Pecan Glaze}
We had a wonderful Thanksgiving dinner complete with Pumpkin Pie….thanks to Shelby. She found a delicious sounding recipe for Paula Deen’s Pumpkin Rum Pie which called for 1 9″ Pie Crust. After filling the crust, there was at least as much filling still in the bowl. So today we present you with Pumpkin Rum Muffins with Maple Pecan Glaze. The pie was delicious by the way, even for the non-pumpkin pie lovers.

Savory Bread Pudding {with Roasted Butternut Squash, Onion & Sage}
For the past couple of years I’ve been making Bread Pudding during the holidays, sweet bread pudding that is. Bread pudding is such a wonderful palate for flavor, pumpkin with butterscotch or cinnamon & brown sugar with pecans, or maple syrup with walnuts…the combinations are endless. It wasn’t until this summer, when our herb gardens were overflowing with love, that it hit me……Savory Bread Pudding.

Salmon & Baked Eggs {Breakfast for Dinner}
Recipe inspiration for this one is quite simple…leftover salmon. Slow-Roasted Salmon with Tarragon and Citrus to be exact. Salmon is one of our favorite things to have for dinner. Whether we prepare the beautiful recipe above from Food & Wine or a little no fuss version, you can turn a nice big salmon fillet into a mouthwatering meal. It’s not often that there is any leftover but on this occasion we will take advantage of that for breakfast or wait is this dinner? Either way Salmon & Baked Eggs makes a delicious meal.
