~ Bacon in the Oven ~ Preheat oven to 400 degrees. Foil line a shallow baking sheet. Lay bacon strips in rows (closely but not touching). Bake for 15 – 18 minutes or until browned and crispy. Remove from the oven and transfer bacon to paper towels to drain.

Veggie Pancakes with Fried Eggs. The light coming through our back windows this morning is brighter than usual. The angle in which it reaches the kitchen creates a spot light. On to the stage steps these gorgeous veggie pancakes. I did not plan for this. When I opened the refrigerator door I was reaching for coffee cream. Instead out came zucchini, summer squash, asparagus, carrots and scallions.

Apple, Smoked Bacon & White Cheddar Quesadillas. What you see is what you get and oh my my, it’s plenty. Four ingredients that play so nicely together. The tart yet sweet apple is wonderful with the sharp cheddar. And thick cut applewood smoked bacon adds a bit of salty to the mix. We enjoyed this for breakfast, but I could be very happy pairing our Apple, Smoked Bacon & White Cheddar Quesadilla with a side salad and calling it lunch.

I was thumbing through a new cookbook and came upon this beautiful recipe for Lemon Ginger Muffins. It called for lemon and crystallized ginger which we had leftover from a Thanksgiving recipe. It was a sign. These muffins are delightful.

Typically when I think of ‘Wraps’ I think of a sandwich alternative that consists of meats, cheeses or veggies that are rolled up into a convenient handheld package. Taquitos are that kind of wonderful.

Going Green Smoothie {a Trial Run}
Here’s to a fresh and healthy start to the New Year. I’ve only had my new Vitamix blender for a few days now but I’m certain I’m going to love it. I’ve made Orange Vanilla Vinaigrette and Thai Pumpkin Soup using recipes from the Vitamix cookbook. Both were delicious. This morning I made this Going Green Smoothie without a recipe. We’ll call it a trial run.

Scoop out the roasted potato flesh and season it with a little butter, a dash of cumin, chili powder and salt and return it to the jacket. Now top with a scrambled egg, diced fresh tomato, sliced avocado, queso fresco crumbling cheese and fresh cilantro leaves.
