Meatball Beef & Broccoli
Meatball Beef & Broccoli. When I decided to share a different meatball recipe for the month of March I needed to enlist my loved ones for some recipe inspiration. For Nick, we would transform his favorite Beef & Broccoli in a meatball meal. The results were out of this world!

Vietnamese Banh Mi Chicken Sandwich
Recreating a Vietnamese Banh Mi Chicken Sandwich was long over due. My kid first introduced me to Vietnamese fare. Pho. Coffee. Bakeries. And Banh Mi. Each worthy of their own post. Thai Pasta Salad {with Peanut Dressing}

Asian Noodles With Perfectly Seared Sea Scallops
My choice was Asian Noodles with Perfectly Seared Sea Scallops. We found such a bargain on Sea Scallops. Great big juicy sea scallops. I believe the steep price tag is what keeps me from eating them every day. But I do love them. We bought eight (should have bought more) and decided to prepare them two ways.

Easy Pad Thai {with Spaghetti Squash}
Pad Thai is my go-to Thai take-out dish. I love everything about it. Traditionally this is a noodle dish and who doesn’t love noodles, especially when they are stir-fried with eggs! Yum!! Today I decided to lighten it up a bit, so I substituted roasted spaghetti squash “noodles” for the classic rice noodles. Results. Two thumbs up in this house.

The perfect portion of noodles, rice or grains with added protein & veggie love. Our latest creation is the Honey Walnut Shrimp Power Bowl inspired by ingredients already on hand. Win-win power bowl.
