Pico de Gallo {Put The Lime In The Coconut}
I had a salad this week that stopped me in my eating tracks. There was a lot going on with said salad. Which made my mind drift from the company at the table. No disrespect, but whoa what a salad.

Healthy Southwest Burrito Bowl. I went to Pet Smart during lunch to replenish Lilah’s food. Pet Smart is very close to Pier One. I was smack in the middle of Healthy Lunch Bowl Week. They sell really pretty bowls.

Restaurant-Style Salsa
Why have I waited so long to discover how easy AND inexpensive it is to make Restaurant-Style Salsa at home, by simply using your blender?! We love Fresh Tomato Salsa in the summer when the tomatoes are abundant and delicious. But frankly, I’m not willing to pay for over-priced, not all that tasty, supermarket tomatoes during the winter months. Chilaquiles are traditionally made from corn tortillas that may have been hanging around for a bit…aka stale.

Chicken & Chorizo Chili
I spent this past weekend organizing my kitchen. Starting with the spice cabinet, moving on to the pantry, followed by my dishes cupboard and ending with the freezer. I’m sure everyone has their problem areas but since I began food blogging all of mine have blown up. Hey now! ;-)

Crab Stuffed Chile Rellenos
The other day I was digging through my recipe inspiration folder, the place I keep pages upon pages of notes, printed recipes, magazine pages and the like. What I found was a scrap piece of paper with these handwritten words Crab Stuffed Chile Rellenos. That night I made this fabulous dish.

Mexican Tamale Pie
I’ve been wanting to recreate my favorite Mexican Tamale Pie since about the moment I began sharing recipes on Lemony Thyme. Which also happens to be when I realized that the most important part of cooking isn’t the recipe, it’s the ingredients.

Carne Asada Marinated Beef Tips {over Jalapeño & Corn Grits}
I saw this plate of heavenly food in a magazine ad (something very similar to this plate). I knew at that moment I would either have to drive to the restaurant or recreate it at home. That’s when our Marinated Beef Tips {over Jalapeño & Corn Grits} were born.
