Roasted Lemon & Artichoke Chicken. We were looking for an easy weeknight meal that could be made from ingredients already on hand. We like to keep boneless skinless chicken breasts in our freezer. We buy them in bulk, trim them of any fat, then lightly pound them to an even thickness before freezing them flat in bags of two. When we’re ready to use them we just thaw and create our meal.

Shelby and I recently explored Ethiopia. More precisely we explored her kitchen. We set out on a Sunday adventure that delivered us to Desta Ethiopian Kitchen, a highly favored restaurant here in Atlanta. We sampled many, many dishes and decided our favorite of all was the red lentil stew or Miser Wot.

Berbere {Ethiopian Spice Mix}
One of our favorite dishes enjoyed at Desta Ethiopian Kitchen was Miser. Red lentils stewed in a rich spicy berbere sauce with onion, garlic, and ginger. I set out to recreate this warm and flavorful dish from the ground up. Here is my version of the Berbere spice blend (pronounced burr-burr-ee and meaning “hot”). I slightly adapted this recipe from Epicurious according to the spices I had on hand and reduced it by half.

Sesame Chicken {Lower Sodium}
Sesame Chicken. This recipe recreation was too good not to share. We recently made a fabulous dipping sauce for some sweet potato steak fries and the key ingredients were agave nectar and soy sauce. One taste of it and my love for sesame chicken came rushing back.

Sushi Stack
I must admit I’m quite proud of my Sushi Stack. Not only was it delicious, but it looks so pretty in a picture. And we all know how important that is :) Every time I visit Whole Foods I look forward to winding my way through the store, ultimately reaching the seafood counter. They don’t always have sushi grade tuna but on this day they did. What a huge treat and such a delicacy.

Sage Brown Butter Shrimp Scampi
Sage Brown Butter seemed like a natural way to build this Shrimp Scampi dish. It’s well noted on the pages of Lemony Thyme that Sage Brown Butter is something I’m passionate about. The best way to describe it…’sensual.’ Definition ‘sen-su-al’ adjective: “relating to or consisting in the gratification of the senses or the indulgence of appetite.”

I had a fabulous day yesterday, spent in the company of my daughter Shelby. As often as possible, and most always on Sundays, we get together for a day of catching up. No matter how often we speak on the phone there’s nothing like the feeling that overcomes me every time I see her and each time we spend a day creating life’s memories.
