My Go-To Guacamole Recipe
Did you know that Guacamole is one of the most popular Super Bowl snacks?! Right up there with Chicken Wings! But it’s been around long before the big game ever took place. Guacamole dates back to the 1500’s and due to its nutritional value was a staple in the Aztec diet, although they called it āhuacamolli – which translated means “avocado sauce.”

Mardi Gras Wings Seasoning Blend
We LOVE Publix Mardi Gras Wings aka Mardi Gras Wings Seasoning Blend. Any time I have to run to the grocery store for a last minute ingredient I can count on someone shouting to me as I go out the door, “pick up a couple Mardi Gras Wings.” I have all I can do not to eat them on the drive home. Their aroma alone makes my mouth water.

Homemade Taco Seasoning
Homemade Taco Seasoning uses six ingredients you’ll likely already have on hand. Making your own spice blends is easy and economical. What a great way to incorporate individual spices already in your cabinet.

Easy Pad Thai {with Spaghetti Squash}
Pad Thai is my go-to Thai take-out dish. I love everything about it. Traditionally this is a noodle dish and who doesn’t love noodles, especially when they are stir-fried with eggs! Yum!! Today I decided to lighten it up a bit, so I substituted roasted spaghetti squash “noodles” for the classic rice noodles. Results. Two thumbs up in this house.

Classic Lasagna {with a Spooky Effect}
I decided to make a giant Classic Lasagna to share with my work family. But I wanted to add a spooky element to the dish. Wait til you see what I did.

Honey Walnut Shrimp Power Bowl
I’ve completely jumped onto the ‘Bowl’ bandwagon. Rice bowls, ramen bowls, power bowls, Buddha bowls, dragon, macro, breakfast and lunch bowls….they all make me happy. The perfect portion of noodles, rice or grains with added protein & veggie love. Our latest creation is the Honey Walnut Shrimp Power Bowl inspired by ingredients already on hand. Win-win power bowl.

Cheesy Beef Enchilada Dip
There’s something about watching football while raking a chip through hot cheesy dip. It just feels good. I hadn’t planned on making, picturing and sharing this recipe today, but it’s Game Day and we deserve it. You and me. Cheesy Beef Enchilada Dip is soooo easy. Five ingredients and 15 minutes is all you need.

Pork Souvlaki {with Tzatziki Sauce}
Pork Souvlaki {with Tzatziki Sauce}. It’s time for a relatively wordless Wednesday. These skewers of happiness happened. A simple marinade of olive oil, lemon juice, red wine vinegar, garlic and fresh oregano infuse the tender pork chunks with classic Greek flavor.

Savory Egg Stuffed Poblano Peppers
I lay in bed Sunday morning pretending to be asleep. There was a steady rain tapping on the window, the kind that lulls you to sleep. It was not my morning to get up with the dogs (yet if I were already awake when the first bark came would it seem only reasonable that I take them out, even though I did the day before). These are my words, we’re not really score keepers. I justified my silent stillness by creating recipes in my mind. Savory Egg Stuffed Poblano Peppers nestled on a bed of enchilada sauced white beans. I did not take the dogs out.
