Homemade Junior Mints
I had a blast playing Secret Santa at the office this year!! I always do. This yearly tradition has become a great way to welcome in the holidays, with a bit of mischief and good fun. The week of Thanksgiving we fill out our Santa wish list, then blind draw who we will secretly spoil the week of our annual company Christmas Party. Last week, that all happened in epic proportion. I have this bag of baking supplies that I hide out of sight in the hall coat closet. My logic is questionable since I (1) hid it, and (2) it’s been discovered. It contains everything from Peanut M&M’s to Hershey’s Kisses to Ferrero Rocher, plus assorted other essentials like chocolate chips, shredded coconut, marshmallows, and Heath toffee bits.

I was introduced to this fabulous RECIPE a couple of years ago and tucked it into my must-make folder for safe keeping. Juicy sweet pineapple, coconut, macadamia nuts, sweetened condensed milk, dark rum, and the surprise ingredient ginger snaps. Baked into awe-mazing. Oh my!! We’ll call this heavenly dessert, that screams tropical paradise, Piña Colada Baked Pineapple.
