Veggie Frittata {Breakfast Burrito or Quesadilla}
“We can sleep til we get up.” That’s what we love about Saturday mornings. We did at least until we got a puppy. Now we “sleep til Scrappy Thyme gets up.” So while I lay in bed this morning waiting for her to call to us, I was thinking about breakfast. And how I might use up the mother load of leftover fresh salad ingredients that had taken over my fridge. That’s when I decided to make a Veggie Frittata.

Fresh Veggie Nachos {Sundays with Shelby}
Fresh Veggie Nachos {Gluten Free}. I love my kid. I know. We all do (love our kids that is). Homemade Cream of Mushroom Soup. I recently saw a fb post from a well known blogger that asked followers if they used canned goods in their cooking. She received hundreds of comments that ranged from “NEVER” with a long list of the reasons why not to, to “My husband and I both work. Coming home to a crock-pot meal (that calls for cream of…) allows me time to play with my daughter before bed.”

Thai Beef Salad {with Fresh Herbs}
Thai Beef Salad. What a lovely way to enjoy a good piece of beef. I know most recipes call for using lean flank steak. And while I’m sure that’s very nice on this salad, on the rare occasion that we have steak, I prefer the most tender cut I can find. And that would be a filet. Grilled to medium-rare. Sliced nice and thin. It was that thought alone that inspired this recipe post. Every bite of this Thai Beef Salad is a flavor explosion.
