The holidays have a way of throwing us me off course. No matter how hard I try, temptation is waiting at every turn. This year is going to be different. Yes, I will cave to some temptations, or better said…enjoy my favorite dishes in moderation. Yet, what I won’t do is completely abandon my Healthy Choices plan only to start over on January 1st. Butternut squash, fresh mushrooms & spinach, an open box of pasta and the end of a hunk of cheddar cheese came together in a snap.

Hanging on to every fresh produce summer moment over here on Lemony Thyme. I’m calling this soup Roasted Veggie & White Bean Chowder because it has a creaminess about it and chowders are amazing. The beautiful thing is the creamy came from the white beans not cream or butter. That puts this soup squarely in our Healthy Choices category.

Blueberry Balsamic Red Onion & Gruyere Grilled Cheese
I’m always, always on the lookout for the next best grilled cheese sandwich. I seek inspiration at every turn. Every turn down the grocery store isle. Every turn through food magazine features. And every page turn of my current favorite cook book. And there she was. Right in front of me for nearly a month before she jumped out and bit me. That gorgeous Emmentaler on Rye sandwich inspired our Blueberry Balsamic Red Onion & Gruyere Grilled Cheese.
