Nonetheless, here I am again digging through my recipe archives to find the best tasting lower calorie recipes to share with you. This lightened up Broccoli Cheese Casserole is light on calories but just as yummy as any full fat version I’ve had in the past.

Baked Potato {with Garlic Roasted Broccoli & Cheddar Cheese}. While your Perfectly Baked Potato is cooking, why not roast some broccoli along side! Garlic Roasted Broccoli is a favorite side dish and so easy to make. Cut your head of broccoli into florets, lay them on a sheet of heavy duty aluminum foil. Add 3-4 cloves of minced garlic and a good drizzle of olive oil, then season with salt and pepper. Seal the foil making a packet.

So while I lay snuggled deeply into my bed I did a mental inventory of the ingredients in my fridge and pantry. If there was one thing that would get me out from under the covers, it was breakfast.
