The St. Patty’s Melt {not just for St. Paddy’s Day}
It’s St. Patrick’s Day! How does one day draw in sooo many people? Beer. AND that we’re a melting pot society…who wants to claim to be Irish at least one day a year :) St. Patrick’s Day seems to span across continents, dialects, and generations. We’re looking for permission to drink. Beer. And make Irish Soda Bread…so we can turn it into Patty Melts on St. Paddy’s Day. That’s my theory. And the St. Patty’s Melt was born.

I have no excuse for not sharing this recipe with you before now. Our close friends and family know that Turkey Burgers with Sweet Potato Fries had always been a signature meal for us. However, somewhere around the time I got caught up in the What’s for Dinner craze (trying different recipes almost every night), our old faithful Turkey Burger got limited play time. Beef Tagine with Butternut Squash {B is for Braising}
Santa Claus is quite perceptive. I mean he brought me a Terracotta Tagine for Christmas and it wasn’t even on my list. How did he know?!! Working perfectly into our Winter Thyme Spice Exploration plan, we put that baby to good use tonight. We turned a basic beef stew into a fragrant adventure with this Beef Tagine with Butternut Squash. Paprika, cinnamon, ginger, and cayenne came together with tangy tomatoes and sweet butternut squash to create a BIG flavor sauce. The beef was tender, as slow braised beef should be, and completely infused with Moroccan love. I’m smiling.

REALLY Good Meatloaf
The BEST Meatloaf I’ve ever had was one I called The Collaborative Meatloaf. On that night each cook took turns adding an ingredient, the rule was you could only add one ingredient per turn and you must disclose what you added. We made it the way REALLY Good Meatloaf should be made….by starting with good quality meat, adding fresh veggies, binding ingredients like eggs, milk, bread, herbs & aromatics, and then a few secret ingredients. The problem with our original Collaborative Meatloaf recipe is we also took turns making cocktails and I’m afraid the ‘secret’ ingredients will remain a secret.

Swing State Chili {Skyline Chili Inspired}
Today is Election Day and we will enjoy dinner tonight….squarely in front of the television. We kicked around some menu ideas in honor of this important day. Should we have a red, white, and blue Americana theme or perhaps good ole’ Georgia inspired southern food. In the end we decided to focus on the ‘swing states’ who seem to hold the future of the country in their hands. So in honor of the great folks of Ohio….here is our best attempt at your beloved Cincinnati “Skyline” Chili.
