The week following Thanksgiving was epic in terms of leftovers. The pantry doors were bulging like the doors on a pre-teen girl’s closet. The fridge was packed full of 1/2 used ingredients begging for a purpose. And fortunately for us, every food blogger I follow was offering up solutions. This Mexican Casserole was inspired by this beautiful recipe I found on From Away.

Buffalo Wing Chicken Soup {with Orzo}
It’s soup weather in our neck of the woods AND the NFL Playoffs are under way. So when pondering What’s for Dinner, I came up with the combination of Buffalo Wings & Chicken Soup. Do you ever envision a recipe and think to yourself brilliant!, this is the most brilliant creation anyone has ever imagined. I will make it and they will name it after me. But just to be safe, let’s do a quick google search just to be sure someone else hadn’t already thought of it. For a fleeting moment this Buffalo Wing Chicken Soup was my chance for fame. Sadly, it’s not my time….let’s just say it’s been done…

Smoked Turkey & Brie Grilled Cheese with Apples & Spinach {and Apple Butter}
Recipe inspiration…hmmm toss up between one of those amazing Artisan Grilled Cheese Sandwiches (which almost implies healthy…hehe) and an unused hunk of Brie in the cheese drawer. Spinach & Mushroom Stuffed Turkey Tenderloin {Applewood Smoked}
I woke up today, recognizing I was feeling really good in my pj’s and realizing my fridge had a mixed bag of unused (although thoughtfully selected) ingredients. It’s been one of those weeks….the kind that kicks you in the butt and says snap out of it. Still in my pajamas as I write this post, I am preparing Spinach & Mushroom Stuffed Turkey Tenderloin. Never left the house ergo never entered a grocery store = Winning!! And yes, I’ve snapped out of it.

Chicken Enchiladas {with Red Sauce}
The recipe inspiration for this dish comes from a dear sweet friend. She delivered two pans of these delicious Chicken Enchiladas to my family at a time of need. They were such a welcomed meal that so warmed our souls at that moment (and have every time I’ve made them since). They are mild yet so full of flavor that they keep you coming back for more.
