Sea Scallops. Sweet. Juicy. Hint of ocean breeze. Is it wrong that I’ve put Whole Foods on my list of things I’m thankful for? Whole Foods inspires me in many ways….to try unique produce items, to dabble in International cooking, to grow bamboo, to someday cook a whole fish (head on), to eat more whole grains, to drink better wine….I could go on and on.

Pan Seared Sage Brown Butter Scallops {with Sweet Pea Puree}. Not sure if I need to say more. LOVE the Sea Scallops, they are such a huge treat. Simply pan searing them with a sprinkle of salt & pepper is all they really need….but huh huh we gave them a little more. If you’re going to sear them in butter anyway, why shouldn’t it be in that seductive favorite Sage Brown Butter.

Cilantro Lime Shrimp & Avocado Tostadas {Weight Watchers}
It’s funny how one abundant ingredient can spark all kinds of recipe inspiration. For us, it’s what seems to be a never ending bag of Corn Tortillas taking up space in our fridge drawer. Thumbing through my cookbook rack yesterday, I came across my Weight Watchers cookbook and well, let’s just say we may need to visit a couple of these recipes heading into the holidays ;) Tonight we’ll start by adapting a WW Shrimp Tostadas recipe.

Salmon & Baked Eggs {Breakfast for Dinner}
Recipe inspiration for this one is quite simple…leftover salmon. Slow-Roasted Salmon with Tarragon and Citrus to be exact. Salmon is one of our favorite things to have for dinner. Whether we prepare the beautiful recipe above from Food & Wine or a little no fuss version, you can turn a nice big salmon fillet into a mouthwatering meal. It’s not often that there is any leftover but on this occasion we will take advantage of that for breakfast or wait is this dinner? Either way Salmon & Baked Eggs makes a delicious meal.

Baked Cod with Montpellier Butter
Cod is a wonderfully mild white flaky fish. It’s happy seasoned with anything from fresh herbs to punchy marinades. It’s beautiful baked or grilled and when leftover it begs to be the star in a batch of fish chowder. After recently learning about freezing fresh herbs in butter or olive oil, I began to do a little compound butter research and decided Montpellier Butter would be the perfect pairing with our baked cod.

Salmon & Snow Pea Pasta with Tarragon Cream Sauce. Doesn’t that just sound so creamy and delicious. It was. I’m not sure who decided that Salmon & Peas are two peas in a pod…but I’m right there. I know I can’t claim everything as comfort food but….buttery baked salmon, mild snow peas, pasta tossed with an ultra creamy tarragon sauce….muah!!

Cuban Tilapia {Third Coast Inspired}
Way back when, when I was much younger, I would frequent a neighborhood hole-in-the-wall kind of place every Friday night (there really were holes in the wall, each with a detailed story). This place was special. It had extreme character and characters, beautifully colorful people and hand-painted murals of them, free flowing spirits and free spirited bar tenders, bathroom walls that told stories through their ‘underwater’ paintings, Calypso music throughout and a patio with thatched umbrella tables overlooking…..the parking lot. And did I mention a kitchen manager that aimed to please. Oh yes, the later in the evening you hung in….the more creative he became. And that is where this Cuban Tilapia recipe was born. Bloody Mary Dressing {with Shrimp & Avocado Salad}
Nothing like a good spicy Bloody Mary to wake up the taste buds and catch your attention. Gosh I love them. Now that the whole world is caught in a smoothie, vegenator, super blender craze I envision the Bloody Mary reborn. We’ve already fallen in love with Green Bloody Mary’s and recently enjoyed a version made with Sake as well. I think I need to dedicate an entire post to Bloody Mary’s or better yet cocktail inspired recipes, but for today we’ll focus on this lovely Bloody Mary Dressing.

Shark Kebabs {aka Shark Bites}
Today I was given the challenge of coming up with a Shark recipe. Yes I said Shark…as in Jaws (but smaller, teeth removed). What came home from the store was a fresh Shark fillet and a vote of confidence, “I know you’ll come up with something good…and shouldn’t everyone try shark at least once?!” And so the recipe research began. After reading many I began to see a pattern….powerful punchy flavors. Not sure what we’re covering up but I’m all in. Welcome Shark Kebabs with Orange-Avocado Salsa served over Spiced Cashew Rice.
