Fish Fillet Sandwich {Taste Test}
Please tell me I’m not alone in my love of McDonald’s Filet-O-Fish Sandwich. I must be honest and admit I had let our relationship drift over the last several years…it’s my fault, I blame myself. However, thanks to the new “Favorites Under 400” (calories) campaign our love affair has been rekindled. I’m sure there are critics who will scoff at my admission, but in order to conduct a fair Taste Test I must inform (and warn) my competition of the nature of my personal relationship with F-O-F.

Thai Red Curry White Fish {with Squash & Zucchini}
Thai Red Curry Paste is becoming a go-to ingredient for me. It seems to find it’s way into Salmon Burgers, Meatloaf, Soups, and certainly Curry dishes. It’s a wonderful flavor…not too hot, just uniquely red curry.

One of my favorite birthday gifts this year (Aerosmith tickets aside) was Food & Wine’s 2012 annual cookbook. This Salmon Steak with Curried Fennel-Wine Sauce recipe is straight off those pages and this is our 3rd time enjoying this dish. It’s simply amazing.

Southwest Corn & Shrimp Chowder “Chowda” was something we grew up on in New England. Corn, Clam, Oyster… they were all favorites and my mom made them all from scratch. After college, when I was ready to move into my own apartment, she wrote out some “simplified” versions of basic recipes for me. Chinaman’s Pie, Meatloaf, and Corn Chowder were all included.

Niçoise Salad with Champagne Vinaigrette
I’ve always loved how the Niçoise Salad looks on a plate. Today it was lunch. The ingredients speak for themselves. We treated ourselves to a piece of fresh tuna which we dipped in sesame seeds then seared. The dressing was champagne mustard, white balsamic, olive oil, minced shallot & garlic, fresh tarragon leaves, sea salt & fresh cracked pepper.

Salmon Burger on Toasted Onion Roll
It’s Monday. Honestly I did not have a What’s for Dinner plan until leaving work at 5:30 pm. Salmon is always a favorite go-to protein for us and readily available. It’s the “if all else fails, we can always have Salmon” and we know it will be a good meal. I recently tried something new with Salmon ~ Salmon Meatballs. They were so moist and flavorful and pop in your mouth get me another good that we had to revisit that recipe.

Seared Scallops with Macadamia Cilantro Pesto
Just a little appeteaser… Start with beautiful sea scallops, rinse and pat dry. For these I lightly rolled the edges of the scallops in some sea salt and freshly cracked pepper. Set aside while you make pesto.

Coconut Almond Shrimp with Sweet & Spicy Orange Sauce. Tonight marks the end of the 4th of July Holiday week. And if you’re anything like me, you’ve been milking it for everything it’s worth. We have spent the last 36 hours on “vacation” at our good friend’s new lake home. Tucked away miles from the hustle and bustle (yet less than an hour from home), sits their beautifully peaceful retreat. We rolled in jet ski adventures, with big laughs, a great dinner, porch sitting, and Breakfast at Wimbledon. Just perfect!
