Thai Green Curry Baked Cod
We recently attended a wedding where we were treated to a most spectacular buffet of Thai food. The appetizer spread alone captivated our attention without end (check out my collage below). And when the dinner dishes were set out we approached them with the same enthusiasm. That’s fancy talk for multiple trips through the buffet line. While I was oh so happy with everything served, the Green Curry was still lingering in my mind three weeks later.

Roasted Tomatoes with Shrimp & Feta
There was ‘something’ about this Roasted Tomatoes with Shrimp & Feta that grabbed my attention from the moment I saw it. Which was two days ago, somewhere between 3:30 and 4:00 am, while lying in bed surfing Pinterest on my phone. This wide awake in the middle of the night thing has become a bit of a habit. I’ve been told it’s the age, for now I call it my inspirational ‘me’ time.

Seafood Lasagna {with Jalapeño Alfredo Sauce}
Seafood Lasagna {with Jalapeño Alfredo Sauce}. Indulgent. I know. I make no excuses and take full responsibility for my actions. Here’s how it happened. Our goal, by the time the Farmers Market opens this spring, we’ll have a clean canvas for recipe creation.

Shrimp Fried Farro
I had my heart set on Fried Rice. Having no rice in the house was just a minor set back. Introducing Shrimp Fried Farro. Welcome Winter Thyme 2014. Today is our second straight day of snowbound living for the second time this year. We live in the sunny south, where the peaches grow and our people are as sweet as our tea. We’re not accustomed to waking up to this, although I must say it’s quite beautiful.

Crab Louie Salad Sliders
Crab Louie Salad Sliders. The Crab Louie Salad has been around for over 100 years and first became popular on the West Coast of the United States (or was it King Louie himself who first dined on this salad…the world may never know). The salad consists of crisp lettuce, sliced tomato, hard boiled eggs, ripe olives, sometimes asparagus….and of course gorgeous crab meat which is tossed in Crab Louie Dressing.

Fish Taco Bowls
Fish Taco Bowls. I just adore complete meals served in a bowl. For breakfast, lunch or dinner. And I don’t discriminate against ingredients based on the time of day. As long as they are fresh and flavorful…I’m a happy girl.

Crab Rangoon Dip {with Wonton Chips}
Crab Rangoon Dip {with Wonton Chips}. Crab Rangoon are such a favorite around here. We even make them from scratch from time to time. But that was before I served this dip to my family on Sunday and then again to my work family on Monday. I think we’ll be cutting corners (instead of individually folding and deep frying) and jump right to the good stuff from now on. It was a huge hit!!
