The responses ranged from Shellfish Goodness to Seafood Delight, Call Me for Supper, and Shell-fish-pa-looza. All of which could aptly label this fabulous dish.

Pecan Salmon Caesar Salad. This is such a wonderful weeknight meal. Simple fresh ingredients that come together with ease. Glorious maple pecan encrusted salmon over a bed of crisp romaine with hard boiled eggs, fresh tomatoes, homemade croutons and shaved Parmesan cheese. As delicious as you could find in a restaurant, enjoyed in the comfort of home.

Shrimp & Summer Vegetable Farro Salad. Farro. Do you know it? I just discovered this beautiful grain and am a bit smitten. Besides it’s slightly nutty flavor and wonderful texture which I adored, it’s also high in fiber and packed with vitamins and magnesium (which has health benefits of it’s own, especially for women). Now combine Farro with fresh summer veggies and protein packed shrimp and you’ve got a power meal that will keep you satisfied.

Shrimp Po Boy. Oh Boy! The words ‘Fried Shrimp’ drifted through the office the other day. I could hear the excitement build, as one by one people shared their love of fried shrimp. Boy wouldn’t I love a nice big plate of succulent fried shrimp. Better yet, wouldn’t I love a nice big Shrimp Po-Boy.

I recently got on a kick of looking for ways to ‘Deconstruct’ recipes. It seemed like a cool way to present a dish and the couple I have posted were quite fun. Next up on my ‘to-be-deconstructed’ list was Tuna Noodle Casserole. A comfort food dish that many of us grew up on (whether you liked it or not). My thought was to build the layers of flavor thoughtfully using top quality ingredients to deliver a bowl of comfort. I think I’ve succeeded with this one.

Halibut in Roasted Romesco Sauce over Pasta. Now that was a fabulous meal. I sampled Romesco Sauce recently and fell in love with it. I immediately added it to my ‘must make soon’ list and am so glad I did. The best way I can describe this sauce is as roasted red pepper pesto. It’s nutty, with big bold flavors and is so versatile.

Crisp Cod Cakes with Peach Basil Relish. I had a moment yesterday. A really big moment. I was on my way to work via McDonald’s drive-thru when my phone rang. The voice on the other end said “Lib, I’ve got to do something.” I pulled my car into a parking lot and sat and listened. She proceeded to share a conversation she had with her 7 year-old daughter that morning…a conversation that brought us both to tears.

Grilled Swordfish with Lima Bean & Herb Butter. I haven’t always loved Swordfish. I remember it being dry and underwhelming, so frankly I avoided it. Too many other choices that I knew I loved. I’ve shared recently that fish speak to me. There’s really no other way to explain how I can approach a massive row of freshness and choose….that one, I’ll have that piece of fish. That’s what happened the day I fell in love with Swordfish.
