Chicken Marsala Meatballs for National Meatball Day!
We shall make Chicken Marsala Meatballs. Because TODAY is National Meatball Day! With the way I love meatballs, this food holiday is deserving of a celebration. A Meatball Palooza if you will. I have so many meatball recipes to share (and several I’ve yet to create) that we’ll need days to properly honor those perfectly packaged bundles of love. I shall call this celebration March Meatball Madness and share a meatball recipe every day for the remainder of the month.

Malfatti {Spinach & Ricotta Dumplings}
Continuing on my classic Italian recipe exploration I discovered Malfatti, a true Italian comfort food. These spinach and ricotta ‘dumplings’ are soft and tender and practically melt in your mouth.

Double Chocolate Chip Mini Muffins
This recipe yields 4 dozen Double Chocolate Chip Mini Muffins!! Does anyone else buy boxes of “Little Bites” muffins for their kids (big or small)?? I can’t believe I’m admitting it – not because I’m a packaged food snob, but because muffins are so darn easy to make at home!

Sausage & Mushroom Ragù
Sausage & Mushroom Ragù. This dish is incredibly satisfying. The mild Italian ground sausage is slow cooked with mushrooms, red wine and aromatics until the flavors melt together like your favorite comfort food.

Herby Polenta {with Smoked Gouda}
I’m not sure whether to categorize Herby Polenta as a side dish or a main dish. I would be entirely happy and comfortable with that big bowl and a spoon. The fresh herb flavors popping through with hints of smoked gouda in every creamy extremely satisfying bite!

Roasted Tomato & Red Pepper Dip
I was torn on whether to call this beautiful bowl of roasted goodness a dip or a spread. Not that it really matters, but considering I dipped my way through its photo shoot, I settled on Roasted Tomato & Red Pepper Dip. Had there been a baguette in the house, this most certainly would have been called a spread. You decide.

Breakfast Sandwich {Egg McMuffin Style}
I love a good Breakfast Sandwich. What better day to enjoy one than today. Happy National Egg McMuffin Day! I will happily admit that I have eaten many a McMuffin hot from the drive-thru line. They were quick & easy and always hit the spot. So whether you’ve got a little extra time to make your own like I did this morning or you’re supporting your favorite local breakfast joint….don’t miss an opportunity to celebrate this beloved breakfast sandwich!!

National Chili Day Recipe Roundup
February 25th is National Chili Day and that means a recipe roundup is in order! Right smack in the middle of Winter, just when cabin fever is getting real and we’re all longing for spring. It’s the perfect chance to break out a new Chili recipe to excite your taste buds. The Chili Police could have great fun with this recipe roundup and argue that none of these recipes are indeed Chili. For the purpose of conveying a collection of soups/stews that are seasoned with aromatics and spices most akin to Chili – we’re going to roll with it.

Addicting Chili Cheese Sweet Potato Fries
These are Addicting Chili Cheese Sweet Potato Fries. They are a hearty fill-you-up meal that eat like nachos. They also happen to be a fantastic way to use up your favorite leftover chili from the weekend. And I call that winning!
