Berbere {Ethiopian Spice Mix}
One of our favorite dishes enjoyed at Desta Ethiopian Kitchen was Miser. Red lentils stewed in a rich spicy berbere sauce with onion, garlic, and ginger. I set out to recreate this warm and flavorful dish from the ground up. Here is my version of the Berbere spice blend (pronounced burr-burr-ee and meaning “hot”). I slightly adapted this recipe from Epicurious according to the spices I had on hand and reduced it by half.

Meatloaf {Moist & Delicious & Simple}
Moist & Delicious Meatloaf. Simplify. This word hangs over my kitchen sink and is more often than not… ignored. I love the concept of ‘less is more’ I just struggle when it comes to cooking with this in mind. Having said that, this meatloaf recipe is the perfect example of combining just a few simple ingredients to create magic. Maybe this should be called Magic Meatloaf.

Baked Potato {with Garlic Roasted Broccoli & Cheddar Cheese}. While your Perfectly Baked Potato is cooking, why not roast some broccoli along side! Garlic Roasted Broccoli is a favorite side dish and so easy to make. Cut your head of broccoli into florets, lay them on a sheet of heavy duty aluminum foil. Add 3-4 cloves of minced garlic and a good drizzle of olive oil, then season with salt and pepper. Seal the foil making a packet.

Friday Night Sliders. Because sometimes you just deserve a good burger!! When it comes to food I’m all about the package, the delivery if you will. So if there is a way to make a burger cute I’m all in. We have White Castle to thank for the slider revolution. And while their thin griddle-cooked patties have their place in history, they’re not my favorite. Don’t hate me.

Steak & Cheese Subs {with Onion, Mushrooms & Jalapeno} are the perfect week night meal. I held back from calling these Philly Cheesesteaks. I’ve never actually had an authentic Philly Cheesesteak but am sure they are worthy of more effort than it took to make these subs. These were super fast and so easy. I also held back from calling these Steak & Cheese Grinders, which is what I grew up loving.
