Cheesy Mashed Potatoes are a favorite Thanksgiving and Christmas side dish. Creamy mashed potatoes get a little flavor love with the addition of sour cream and cream cheese. Then they are baked casserole style with a topping of shredded cheddar cheese. One word. Yummy.

Baked Breakfast Potato {with Scrambled Eggs, Avocado, Tomato & Queso Fresco. Take all your favorite fresh Mexican flavors and layer them onto a Perfectly Baked Potato. Scoop out the roasted potato flesh and season it with a little butter, a dash of cumin, chili powder and salt and return it to the jacket. Now top with a scrambled egg, diced fresh tomato, sliced avocado, queso fresco crumbling cheese and fresh cilantro leaves.

Honey Ginger Vinaigrette {with Shallot & Cilantro}
We’re so fortunate to have a wonderful Olive Oil & Vinegar Bar just minutes from home. Every time I walk into this store I’m treated to a new flavor pairing. My most recent addition to my collection (I think I’m up to about 10 different vinegar flavors) is Honey Ginger White Balsamic. This was the flavor base for my Honey Ginger Vinaigrette {with Shallot & Cilantro}. The shallot and cilantro offered a wonderful flavor balance to the slightly sweet honey ginger white balsamic. Lunch Counter Style Chef’s Salad
We had a good old fashioned Lunch Counter Style Chef’s Salad for dinner last night. It had been years since I’ve had one. Once the salad revolution transformed how we view salads, some of the old standards have been slowly forgotten. I can say with certainty that there’s a reason the Chef’s Salad was on most menus for decades. It’s delicious and a completely satisfying meal.

Baked Potato {with Garlic Roasted Broccoli & Cheddar Cheese}
Baked Potato {with Garlic Roasted Broccoli & Cheddar Cheese}. While your Perfectly Baked Potato is cooking, why not roast some broccoli along side! Garlic Roasted Broccoli is a favorite side dish and so easy to make. Cut your head of broccoli into florets, lay them on a sheet of heavy duty aluminum foil. Add 3-4 cloves of minced garlic and a good drizzle of olive oil, then season with salt and pepper. Seal the foil making a packet.
