Spinach Salad is the inspiration. Snacking on Sugared Pecans isn’t all bad either. We just need this recipe around as a go-to.

Spinach Salad with Warm Bacon Dressing {Share the Love}
Spinach Salad with Warm Bacon Dressing is probably the number one dish I’m assigned for a group dinner. It’s just so darn good. I bring it willingly because I know we’ll be treated to amazing stuffed mushrooms, cheesy potato casserole, and marinated flat iron steak. We all have our dish.

Baked Pattypan Squash {with Wild Rice, Sage Brown Butter & Sausage Stuffing}
A pattypan squash is the perfect delivery vehicle for one of my favorite food groups, Stuffing. We will stuff these beauties with wild rice, fresh veggies, sage, and sausage. Baked Pattypan Squash with Wild Rice, Sage Brown Butter & Sausage Stuffing. So while this post started out to be much more about my love of stuffing than my new found fascination with pattypan squash, I think it’s interesting to share a bit of history on the White Scallop Summer Squash aka Pattypan.

Zucchini, Summer Squash & Tomato Gratin
Every booth at the Farmers’ Market yesterday was bursting with tomatoes and squash, and I just can’t say no. I even tried to buy just 3 ears of corn and the lady next to me said who does that….get a dozen, I did. So after visiting with 10 or so farmers, I had more than I could carry or possibly eat this week. No worries, with an office full of veggie eaters we’ll just share the love.

Fresh Veggie Pancakes with Tomato Salad
Fresh Veggie Pancakes with Tomato Salad. Today is the day I must use up the remains of this weekend’s produce run. I am guilty of over buying (yes dear I am admitting it) and also of over eating (claiming that one too…..boy feels good to get that out). However, I also think I’m pretty darn good at whipping up a dish from what’s left in the fridge that needs to be eaten by tomorrow.

Niçoise Salad with Champagne Vinaigrette
I’ve always loved how the Niçoise Salad looks on a plate. Today it was lunch. The ingredients speak for themselves. We treated ourselves to a piece of fresh tuna which we dipped in sesame seeds then seared. The dressing was champagne mustard, white balsamic, olive oil, minced shallot & garlic, fresh tarragon leaves, sea salt & fresh cracked pepper.
