I discovered a couple things from this recipe. Greek Yogurt makes a pretty darn good substitute for mayonnaise IF you are adding some punchy flavors to it….like cumin, coriander, and orange juice & zest. That’s exactly what makes up the delicious dressing for this Apple Fennel Slaw.

Farmers’ Market Favorites
I could hardly wait for today to finally get here. It’s opening day for our local Farmers’ Market. Every Wednesday and Saturday from now through October we will be buying our fresh produce from local farmers. I could hardly wait to get there, then I could hardly wait to leave so I could show off my bounty. Recipe inspiration came streaming through my mind as did recipes past where fresh vegetables transformed the dish. That’s when I decided to round-up all my Farmers’ Market Favorites in one post.
