Flame Roasted Poblano, Cilantro & Lime Dressing
Fire Roasted Poblano, Cilantro & Lime Dressing is my new favorite. Slightly smoky bright flavors, balanced by toasted cumin, cilantro and fresh lime juice. I wanted each component to hold it’s flavor identity, so I’ve left it slightly chunky. Turns out this dressing doubles as a kickin’ salsa :) and soon to be used as a marinade.

Caprese Panzanella {with Shrimp}
I scored these gorgeous tomatoes at the market this week, aren’t the colors amazing! Each year when tomato season hits, we run down the list of our favorite tomato recipes. Almost in unison, I heard Caprese Salad and Bread Salad. Just think what gorgeous children those two classics will make. That’s when the Caprese Panzanella love child was born.

Chopped Italian Submarine Salad
By the summer of sixth grade I was old enough to head off on my bicycle in the morning, with one stipulation, be home before dark. Most days for lunch I split an Italian Grinder with my BFF before heading to the lake. This Chopped Italian Submarine Salad has all those familiar wonderful flavors.

Submarine Dressing
For me, it’s the Submarine Dressing that kicks up all those Italian meats and cheeses as they nestle into crusty Italian sub rolls. I’m a huge fan of Italian Grinders aka Italian Submarine Sandwiches.

Avocado & Chicken Salad Boats
Avocado & Chicken Salad Boats with hints of lime, cumin and cilantro. This delicious plate could easily become my new favorite lunch. The mashed avocado replaces mayonnaise in this recipe, lending numerous healthy benefits.

Tipico Power Bowl {with Grilled Chicken}
This might be my most favorite salad EVER. I’m sometimes reminded not to make statements that can’t stand the test of thyme. If you deliver me a Tipico Power Bowl {with Grilled Chicken} 5 days a week, I’m certain I will sing your praises.

Pico de Gallo {Put The Lime In The Coconut}
I had a salad this week that stopped me in my eating tracks. There was a lot going on with said salad. Which made my mind drift from the company at the table. No disrespect, but whoa what a salad.

Gruyere Cabbage {with Bacon}
We bought a 5 pound cabbage for 88 cents. Not sure why I chose that as the intro line to this recipe, but dang cabbage is cheap. Which makes really good cabbage recipes all the more appealing. We like many, had Corned Beef & Cabbage for St. Patrick’s Day. We like many, have leftovers to repurpose. Gruyere Cabbage was a dish my mom made often. Today, I dug out the 30-year old hand written recipe card, made sense of the measurements, and added bacon. Oh my! I think Mom would be proud.

Spicy Shrimp Thai Buddha Bowl
I don’t think I’ve told you about my 2015 Challenge. My Healthy Choices walking buddy Bethany and I signed up to walk a combined two thousand fifteen miles in 2015. That’s five point five miles per day together or two point seven five miles each. every day. for 365 days. All that walking during our lunch hour, makes these girls hungry. I’m proposing Spicy Shrimp Thai Buddha Bowls all around.
