Roasted Lobster & Corn Cake Grilled Cheese Sandwich
Exhale. Not sure how to spell that sound so do it with me…in through the nose out through the mouth. We’ve made it half way through April aka National Grilled Cheese Month and have proudly shared a unique grilled cheese sandwich each day on our Facebook page. The feedback has ranged from “Speechless” to “Girl. Giiiiiiirl. Yowza!!” to “I’m dreaming of Lobster Corn Chowder reconstructed into a grilled cheese.” That was too good to ignore. Thank you for the inspiration Sarah Mitchell. Here is my version of your request. Roasted Lobster & Corn Cake Grilled Cheese Sandwich.

Monterey Chicken
I remember sitting outside at a patio table, sipping on a margarita, and soaking in the first glimpse of summer. It was twenty years ago and the name of the restaurant escapes me now but the Monterey Chicken does not.

Pepin Potatoes {aka Smashed Potatoes}
We affectionately call these “Pepins.” Jacques Pepin has shared many wonderful recipes with the world, but these potatoes were a gift to us all. Baby Yukon Gold Potatoes braised in buttery chicken broth, then gently ‘smashed’ and allowed to caramelize in the pan.

Tuna Melt Grilled Cheese Sliders
Sometimes a recipe comes to me based on one single ingredient. In this case it was a gorgeous Kimmelweck roll in the case at the bakery. I couldn’t wait to get home and make tuna melts for lunch. I promptly proceeded to burn the bun. With all other ingredients gathered I turned to my freezer to find the tail end of a pack of Party Rye. And that is how the Tuna Melt Grilled Cheese Slider was born.

Avocado, Tomato & Basil Omelet
Avocado, Tomato & Basil Omelet. There’s nothing complicated or new to learn from this post. It’s just a reminder to use your fresh herbs every chance you get. They can take a ho hum omelet and give it a bright pop of flavor. That’s just what fresh basil and scallions did to our tomato and avocado omelet. Havarti cheese came along and gave it a big group hug.

Azalea Cocktail
The 13th hole at Augusta National aka The Masters Tournament is named Azalea. While the entire course is a thing of beauty, there’s something extra special about a green tucked up amongst a backdrop of blooming azaleas. Let that be the inspiration for this cocktail.

Ahi Tuna Burgers {with Avocado Aioli & Sriracha Mayo}
Ahi Tuna Burgers with Avocado Aioli & Sriracha Mayo. After we fell in love with Salmon Burgers, Ahi Tuna Burgers seemed like a natural progression. A nice simple mixture of diced ahi tuna, with a little sesame oil, scallion, ginger, and soy is all you need.

Tuna Mac with Peas
Tuna Mac with Peas. A family favorite comfort food. A blog is after all a place to share memories. I couldn’t recall how it came to be that Tuna Mac with Peas became such a favorite with my sister and I….so I called her and asked her. Her earliest recollection dated back to when we were about 7 and 10. It was our Baby Sitter Dinner.

Waldorf Salad {with Honey-Cardamom Dressing}
One by one I’m recreating classic salad recipes to share on Lemony Thyme. It’s been quite fun bringing life to favorites like the Lunch Counter Chef Salad, the Classic Cobb Salad and now this delicious Waldorf Salad {with Honey-Cardamom Dressing}. The Waldorf Salad is lovely served for luncheons, showers, and other special celebrations; such as a retirement party at the office for one very special lady. Yes, you could serve this salad for just such an occasion. I stayed fairly true to the original Waldorf Salad recipe that dates back to the late 1800’s when it was first served at the Waldorf Hotel in New York City. I did however give the mayonnaise…
