Pico de Gallo {Put The Lime In The Coconut}
I had a salad this week that stopped me in my eating tracks. There was a lot going on with said salad. Which made my mind drift from the company at the table. No disrespect, but whoa what a salad.
In my mind’s voice (also known as “In my head”) I dissected this salad, “What was that? Is that a schmear of black beans under the bed of lettuce. Holy heck, will you look at that shard of golden fried tortilla. This isn’t your every-day ‘Pico’ with that lime punch. Wait. Big lime flavor with a subtle coconut nuance. Unexpected. Completely fresh and inspirational.”
We’ll call this Pico de Gallo {Put The Lime In The Coconut}.
Pico de Gallo {Put The Lime In The Coconut}
Ingredients
- 2-3 roma tomatoes diced
- 1 small onion diced
- 1 jalapeno fine diced
- 1/4 cup fresh chopped cilantro
- 1 lime juiced
- 2-3 Tbl. unsweetened shredded coconut
- salt & pepper to taste
Instructions
- Combine all ingredients. Chill. Enjoy.
