Cilantro Lime Shrimp & Avocado Tostadas {Weight Watchers}
It’s funny how one abundant ingredient can spark all kinds of recipe inspiration. For us, it’s what seems to be a never ending bag of Corn Tortillas taking up space in our fridge drawer. Thumbing through my cookbook rack yesterday, I came across my Weight Watchers cookbook and well, let’s just say we may need to visit a couple of these recipes heading into the holidays ;) Tonight we’ll start by adapting a WW Shrimp Tostadas recipe.

The first time I saw this Baked Eggs in Avocado dish on the Internet I was rather awe struck. It was genius to combine these two ingredients. What a wonderfully healthy breakfast option, packed with vitamins and protein, morning or night.

Shark Kebabs {aka Shark Bites}
Today I was given the challenge of coming up with a Shark recipe. Yes I said Shark…as in Jaws (but smaller, teeth removed). What came home from the store was a fresh Shark fillet and a vote of confidence, “I know you’ll come up with something good…and shouldn’t everyone try shark at least once?!” And so the recipe research began. After reading many I began to see a pattern….powerful punchy flavors. Not sure what we’re covering up but I’m all in. Welcome Shark Kebabs with Orange-Avocado Salsa served over Spiced Cashew Rice. Sweet Corn Tamale Cakes {Share the Love}
Had a wonderful girls lunch out at the Cheesecake Factory this past week. If you’ve ever been you know their menu is HUGE and everything sounds interesting and delicious. At our request, our server gave us a run down of her favorites from each category. She named Sweet Corn Tamale Cakes as one of her all time favorite appetizers, which was quickly seconded by the most experienced Cheesecake Factory veteran at the table. That was easy! Bring 5 forks please. Today I will use this recipe to try and lure my kid off the lake and into my kitchen.

Chicken Salad with Avocado & Cilantro {in a Taco Salad Shell}
Half of our motivation to roast a whole chicken each week is for the leftover cooked chicken and the makings of homemade chicken broth. The other half this week was to find an excuse to make Tortilla Crispy Taco Salad Shells….again. And so the Chicken Salad with Avocado & Cilantro Taco Salad was born.
