Bacon & Sage Soda Bread. I first tackled making Irish Soda Bread on St. Patrick’s Day. Much easier than I had expected, made from ingredients we typically have on hand. AND can be ready in 35-40 minutes, which is nice. Especially when the Classic Beef Stew you’re making is almost finished and you realize you have no crusty bread, which is practically an ingredient on it’s own.

Two ingredients, so much flavor. Grilled Bacon Wrapped Shrimp. Two things you can generally find in our freezer are bacon and shrimp. Bacon because we use it to add flavor to many dishes, but don’t often eat it as…well bacon. We keep frozen shrimp on hand for easy week night meals or in case we’re invited to an impromptu gathering and need a quick & tasty appetizer. Grilled Bacon Wrapped Shrimp is just that. We’re open to invitations.

BLT Stack {with Fresh Herb Mayo} The tomatoes are coming, the tomatoes are coming. Are you as ready as we are for some nice vine ripened heirloom tomatoes? They are such a wonderful treat no matter how you serve them. I decided to stack them up for fun and dress them with a little fresh herb mayo and crispy crumbled bacon.

Pan Roasted Brussels Sprouts {with Orzo & Bacon}. Thought I’d take Roasted Brussels Sprouts in a little different direction, by pan roasting them, then tossing them with crispy bacon and orzo, and topping with toasted panko breadcrumbs. I’m really glad I did.

New England Clam Chowder
As kids growing up, when we went out to a restaurant, what we ordered was routine (thank goodness I outgrew that phase). Even though Mom had it memorized and could have easily ordered for us, from as early as I can remember she insisted we order our own meal (and take our elbows off the table). The server would take our drink order first, mine was always Ginger Ale. Then they’d come back and take our meal order, mine was always a Grilled Cheese Sandwich and a cup of Clam Chowder. Always. When you grow up in New England, it’s not a matter of whether Clam Chowder is the ‘soup of the day’….it will always be on the menu.

The Jarlsberg BLT with Fried Egg
At our last family pot-luck gathering, my sister-in-law brought a crock full of the most glorious cheese dip. Jarlsberg Cheese Dip to be exact. She served it cold with a sliced baguette. I’m sure I never let it out of my sight or reach for the entire evening hour before it was devoured for it’s heavenly goodness. She shared that she had bought this tub of love at her local Kroger supermarket. I promptly sought out the closest Kroger and bought 2 tubs (plain and jalapeno) and a baguette.

Salmon BLT Salad {with Avocado Aioli}
I realize that a Salmon BLT Salad with Avocado Aioli is not much of a recipe. And possibly not worthy of a post. However, it was really good. And the fact that it was very basic, down to packaged croutons…made it about the best thing we had eaten in at least 3 days.

The Wedge Salad {and Grinching Away Christmas}
Today’s the day. The day I dread each January. Taking down the Christmas decorations, or as we call it….Grinching Away Christmas. Every year I procrastinate. Drag it out until the very last minute. The house just doesn’t feel the same without them. The lights of the tree warm the room and my soul. I hear trips being made to the basement….this is really going to happen today. Ugh! Can we just have a Wedge Salad instead.

It’s 10:55 am on a Thursday and I’m writing this post in my pj’s, gazing into my living room where the tree is a twinkling, the fire is a blazing, the dog is a napping, the coffee is a brewing, and the rain is a pouring down. And I’m about to make Bacon Chocolate Chip Cookies Topped with Sea Salt. Can you see me smiling out loud?

Bacon, Egg, & Cheddar Cheese Biscuits {Sundays with Shelby}
It’s been too long since my last Sundays with Shelby outing. Today I’ve come up with a sure fire way to entice her for breakfast. We recently made Cheddar Buttermilk Biscuits {Red Lobster Inspired} and they were delicious on their own. We’re going to elevate the game by building a classic Bacon, Egg & Cheddar Cheese Biscuit out of them. Oh Shelby your mamma’s calling…
