Chicken Enchiladas Soup
This week’s whole roasted chicken got bathed in rich Homemade Enchilada Sauce. Think BBQ Chicken, only basted with that wonderful chili and tomato based sauce. When it came out of the oven it was a sight to behold. We first enjoyed our chicken dinner which later became Chicken Enchiladas Soup.

Brazilian Feijoada {Pork, Beef & Black Bean Stew}
Brazilian Feijoada {Pork, Beef & Black Bean Stew} The word Feijoada (pronounced fay-ZWAH-da) comes from the Portuguese word feijão which means “beans” and is the national dish of Brazil. This stew is made up of rich cuts of assorted pork and beef that are slow cooked with black beans, onions and garlic. It’s then served over rice with orange wedges which provide just the right flavor balance.

Loaded Stuffed Cabbage Rolls. As in…don’t hold back on the veggies. This was a fabulous way to work through the last few fresh veggies that needed to be eaten before it was back to the Farmers Market on Wednesday. This included a gorgeous head of cabbage that I was persuaded to buy (I just love farmers).

Cuban Tilapia {Third Coast Inspired}
Way back when, when I was much younger, I would frequent a neighborhood hole-in-the-wall kind of place every Friday night (there really were holes in the wall, each with a detailed story). This place was special. It had extreme character and characters, beautifully colorful people and hand-painted murals of them, free flowing spirits and free spirited bar tenders, bathroom walls that told stories through their ‘underwater’ paintings, Calypso music throughout and a patio with thatched umbrella tables overlooking…..the parking lot. And did I mention a kitchen manager that aimed to please. Oh yes, the later in the evening you hung in….the more creative he became. And that is where this Cuban Tilapia recipe was born.
