Baked Potato {with Garlic Roasted Broccoli & Cheddar Cheese}. While your Perfectly Baked Potato is cooking, why not roast some broccoli along side! Garlic Roasted Broccoli is a favorite side dish and so easy to make. Cut your head of broccoli into florets, lay them on a sheet of heavy duty aluminum foil. Add 3-4 cloves of minced garlic and a good drizzle of olive oil, then season with salt and pepper. Seal the foil making a packet.

Baked Broccoli Bacon Cheddar Bites I asked Shelby for some recipe inspiration. Perhaps something she had enjoyed recently in a restaurant that she’d like to see recreated. Just so happens she had visited her local watering hole the night before and apparently the Broccoli Cheddar Bites hit the spot. That was good enough for me to begin some recipe research.

Broccoli & Bacon Breakfast Burrito
It’s the weekend!!! Breakfast makes me happy! Discovering leftover steamed broccoli in the fridge inspires me… This morning it shall be Broccoli & Bacon Breakfast Burrito. Super simple and by adding a few fresh herbs and seasonings….super delicious! Of course bacon never hurt flavor either. After browning the bacon in a medium skillet and pouring off the drippings I sauteed onion slices until tender, then added a handful of steamed broccoli florets, fresh lemony thyme, a pinch of Mrs. Dash Garlic & Herb seasoning, and a little salt & pepper.
