I couldn’t have imagined Guinness could find it’s way into breakfast, lunch, dinner, and dessert….but alas it’s been done. Wonderful dishes rich in flavor yet not overdone. I suspect that holds true for Ireland herself. I never question the authenticity of a dish, purely because I love to experiment with recipes and expect others do as well. Pistachio-Chai Muffins
I really should make muffins more often. They are perfect for breakfast, beautiful as an afternoon snack, and happiness just before bed. Beautiful little bundles of goodness. When a recipe calls for Chai Tea, Buttermilk, and Pistachios and you happen to have all of them in the house….it’s a sign. These Pistachio-Chai Muffins have hints of cinnamon, ginger, star anise, clove, cardamom…all the wonderful spices that make Chai Tea so comforting.

Cheddar Buttermilk Biscuits {Red Lobster Inspired}
While writing a post recently on Bang Bang Shrimp {Bonefish Grill Inspired} I polled my family on which restaurant dishes kept them coming back for more. P.F. Chang’s Chicken & Cashew Lettuce Wraps got a mention, as did Chili’s Southwest Eggrolls. But when I mentioned Cheddar Biscuits from Red Lobster, the response was….Mmmmm yes!! So on that night I made them for dinner to go with our homemade turkey soup. Today they are a breakfast invitation for a Sundays with Shelby outing.
