Beef Bourguignon. Boeuf Bourguignon. Beef Burgundy. I think we grew up with this dish. No, not the first two. My Mom made beef burgundy often. The cuts of meat may have started out a bit tough requiring extra cooking love, but the end result was melt in your mouth wonderful. This year’s Christmas Eve Prime Rib was as good as any we’ve had in the past.

Rustic Potato Chowder {with Bacon}
Rustic Potato Chowder with Bacon. After one bite I knew we would have to recreate it for Lemony Thyme. It’s hearty enough to enjoy as a meal and easy enough to become a weeknight favorite. I was just having a conversation with a friend about how bacon makes everything better. I’ve shared before that we keep our bacon in the freezer. That way we always have some on hand and it’s easy to cut into pieces that cook quickly. Bacon adds wonderful flavor to this chowder, but feel free to omit for a vegetarian version. Leftover cooked new potatoes also contributed to the minimal effort required.

Welcome Home Muffins
I made Welcome Home Muffins for my dear friend and co-worker Sabina. She has arrived home after having been overseas caring for her mom. I’m not sure there is anything more personal than caring for a parent. We lovingly follow in their footsteps until it’s time to venture out on our own. Then we look over our shoulder for their approval as we find our way. Often the road leads us back home.

Roasted Veggie & White Bean Chowder
Hanging on to every fresh produce summer moment over here on Lemony Thyme. I’m calling this soup Roasted Veggie & White Bean Chowder because it has a creaminess about it and chowders are amazing. The beautiful thing is the creamy came from the white beans not cream or butter. That puts this soup squarely in our Healthy Choices category.

Loaded Egg Salad
Loaded Egg Salad. Mom taught us how to make really good egg salad. Finely chopped eggs, celery, scallion, mayonnaise, salt & pepper. Nothing complicated just finely done. That’s all I’ve ever wanted in an egg salad. Until my birthday lunch out with Shelby.
