Mushroom, Sausage & Sage Quinoa Stuffing. I could make a meal out of stuffing. In fact I’m sure I have on more than one occasion. This particular recipe was exceptional. It had some key ingredients like lots of celery, carrots, and onion. But it also had some special flavor boosting components.

Albóndigas Soup {Mexican Meatball Soup}
It was this Kicked Up Albóndiga Soup recipe from Hispanic Kitchen that first grabbed my attention. I knew instantly it would be a hit at our house when I read the recipe. We are on an undeniable meatball kick. I’m not sure what’s gotten into us, but it’s full out meatball mania around here.

Italian Bean Soup with Mini-Meatballs. I intentionally did not call this a recipe for Pasta e fagioli, although it was clearly my inspiration. Pasta e fagioli is traditionally a meatless dish, comprised of pasta and beans in a tomato base. When I did my standard recipe research I had a hard time avoiding the bazillion copycat recipes for Olive Garden’s Pasta e fagioli. We may be the only family I know who has not had a bowl of Olive Garden’s Pasta e fagioli. I’m sure it’s delicious but I chose not to compete with the masses.

Shrimp Fried Farro
I had my heart set on Fried Rice. Having no rice in the house was just a minor set back. Introducing Shrimp Fried Farro. Welcome Winter Thyme 2014. Today is our second straight day of snowbound living for the second time this year. We live in the sunny south, where the peaches grow and our people are as sweet as our tea. We’re not accustomed to waking up to this, although I must say it’s quite beautiful.

Veggie Pancakes with Fried Eggs. The light coming through our back windows this morning is brighter than usual. The angle in which it reaches the kitchen creates a spot light. On to the stage steps these gorgeous veggie pancakes. I did not plan for this. When I opened the refrigerator door I was reaching for coffee cream. Instead out came zucchini, summer squash, asparagus, carrots and scallions.
