Lunch Counter Style Chef’s Salad
We had a good old fashioned Lunch Counter Style Chef’s Salad for dinner last night. It had been years since I’ve had one. Once the salad revolution transformed how we view salads, some of the old standards have been slowly forgotten. I can say with certainty that there’s a reason the Chef’s Salad was on most menus for decades. It’s delicious and a completely satisfying meal.

The St. Patty’s Melt {not just for St. Paddy’s Day}
It’s St. Patrick’s Day! How does one day draw in sooo many people? Beer. AND that we’re a melting pot society…who wants to claim to be Irish at least one day a year :) St. Patrick’s Day seems to span across continents, dialects, and generations. We’re looking for permission to drink. Beer. And make Irish Soda Bread…so we can turn it into Patty Melts on St. Paddy’s Day. That’s my theory. And the St. Patty’s Melt was born.

French Onion Soup {with Pumpernickel Croutons}
When I make French Onion Soup I know my family feels loved. That makes me happy. A big pot of buttery caramelized onions, fresh herbs & garlic, nice rich beef stock, topped with an over-sized crouton smothered with cheese. It’s LOVE I tell you.

It’s Super Bowl Sunday and I had resigned myself to the idea that I wasn’t going to put on a big spread, even though this is the 2nd biggest eating holiday of the year, after Thanksgiving. Sausage, Peppers & Caramelized Onion Stromboli {a Groundhog Day Treat}
Earlier in the week, we began discussing what we would cook on Super Bowl Sunday. All the foodie websites and fb pages were alive with recipe ideas and exchanges. The possibilities ranged from good old favorites like wings and nachos to the more exotic Salmon Wraps and Filipino Spring Rolls. I had every intention of hosting a virtual Super Bowl Party on my fb page, even planned a week of recipes and posts centered around that theme. Mac ‘n Cheese {Sage Brown Butter & Bacon}
I’ve recently read some articles on a growing movement to bring Home Ec back to schools. Healthy eating and knowledge of nutrition being the core reason, self-sufficiency and cost savings also getting a mention. And while I wholeheartedly agree, I propose another consideration for teaching teens and young adults the ‘basic’ life skills taught in a Home Economics classroom. Creativity. Cooking, like sewing or painting or wood-working, is a way to express yourself artistically…and a wonderful stress-reliever. So don’t get me wrong, I do believe ‘home’ is the best place to learn these skills, but it was in my 8th grade Home Ec class where I learned to make a Basic White Sauce. Herbed Scalloped Potatoes {Savory & Sweet}
My most favorite bite of Scalloped Potatoes is the edge…same goes for meatloaf, brownies, cornbread, Oooo and prime rib (hint, hint…I love prime rib). So for this recipe, in an effort to get all the edges we can, we’re going to make these in a muffin tin instead of a casserole dish. If you like the cheesy soft center best, butter up a 2 Qt. casserole and get happy…this recipe can be made either way by simply adjusting the cooking time.
