I have been so excited about making ‘waffles’ out of hash browns from the time I first spotted this on Pinterest. Today is the day we shall create a spin on the soul-food classic Chicken & Waffles. Presenting our Chicken & Waffle Fries with Honey Dijon Syrup.

Chicken Enchiladas {with Red Sauce}
The recipe inspiration for this dish comes from a dear sweet friend. She delivered two pans of these delicious Chicken Enchiladas to my family at a time of need. They were such a welcomed meal that so warmed our souls at that moment (and have every time I’ve made them since). They are mild yet so full of flavor that they keep you coming back for more.

Chicken Enchiladas with Tomatillo Sauce {Enchiladas Verdes}
Found a fantastic and super easy recipe for tomatillo sauce which fit right into my plan. I’ve been wanting to make ‘Red’ Enchilada Sauce which we LOVE…but with an abundance of tomatillos in my fridge…green was the more practical approach. So Chicken Enchiladas with Tomatillo Sauce it is.

Chicken in Milk
To quote Jamie Oliver, Chicken in Milk is “a slightly odd, but really fantastic combination that must be tried.” A couple years ago we began what’s now a weekly ritual of cooking a whole chicken. Not only do we enjoy a mouth-watering chicken dinner each week, but we then turn bones into broth, and broth into amazing soups and stews. It was B who first discovered Chicken in Milk by Jamie Oliver. In an attempt to change it up each week (Ooo I like that…the “Chicken Change Up”) he began to read endless websites searching for new and interesting whole chicken recipes. There are a ton of them to try….but…

Brown Sugar Chicken & Sweet Potato Casserole {Comfort Food}
A match made in heaven. That’s what Jennifer & Jason are. The love that surrounded them on their big day was so real you could touch it. It came from their families, separated by an isle but clearly united by love. We their friends were overflowing with joy for them as they said their I Do’s. And as they turned to face us for the first time as husband and wife their beautiful smiling faces and interlocked hands lifted us all.

Fresh Herb Grilled Chicken {with Basil Herb Butter}
Back before there was a negative stigma associated with a recipe that called for a stick of butter (y’all), we could put away some butter. Growing up as a child I seriously thought butter was a side dish….since we all had our own dish of butter when we sat down to dinner. It’s no wonder we ate every vegetable put in front of us (except Brussels Sprouts…love them now). Over the years we have worked pretty hard to replace some (not all) of that butter with healthier options….olive oil, herbs, lemon juice. Having said that, this Fresh Herb Grilled Chicken with Basil Herb Butter recipe, adapted from the queen of butter Paula Deen, has earned the…

Southwest Eggrolls with Avocado Dipping Sauce {Chili’s Style}
Every time I make these Southwest Eggrolls they are a hit. And this copycat recipe gets you pretty darn close to the Chili’s restaurant version.

Chicken Salad with Avocado & Cilantro {in a Taco Salad Shell}
Half of our motivation to roast a whole chicken each week is for the leftover cooked chicken and the makings of homemade chicken broth. The other half this week was to find an excuse to make Tortilla Crispy Taco Salad Shells….again. And so the Chicken Salad with Avocado & Cilantro Taco Salad was born.

Chicken Parmesan {Share the Love}
Chicken Parmesan over pasta makes me comfortable and happy. Today I delivered it to a friend with hopes it does the same for her :) Chicken breasts, lightly breaded, pan browned, topped with a basic tomato sauce, mozzarella & Parmesan cheese. Easy comfort.

Mexican Chicken Soup {Share the Love}
Mexican Chicken Soup has become a comfort food staple for my family. Every time we have it, whether at our favorite Mexican cantina or at home, we’re reminded how wonderfully delicious this soup is. I realized recently that comfort food didn’t have to come in the form of a casserole or laced with chocolate (although for me personally those are way up there on my list). And that chicken soup didn’t have to include noodles for it to warm your soul. With a short list of ingredients, starting from scratch, you can have it on the table in 15 minutes or less. A wonderful Monday evening bonus!
