Chinese Pork Tenderloin {with Garlic Sauced Noodles}
Pork. The other white meat. I absolutely loved this Chinese Pork Tenderloin with Garlic Sauced Noodles. I’m still loving it, reheated the following day. There’s something really special to me about being able to prepare Asian food at home. As much as I LOVE Chinese restaurants, I’m not crazy about the way I feel after consuming MSG and sodium laden dishes. By making recipes at home you control the freshness and the ingredients.

This was a fabulous way to work through the last few fresh veggies that needed to be eaten before it was back to the Farmers Market on Wednesday. This included a gorgeous head of cabbage that I was persuaded to buy (I just love farmers).

Having said that, if you’ll follow this picture montage to the end, you’ll see what a whole roasted tandoori cauliflower looks like, only 17 minutes after it comes out of the oven. And I didn’t work alone.

Thai Beef Salad {with Fresh Herbs}
Thai Beef Salad. What a lovely way to enjoy a good piece of beef. I know most recipes call for using lean flank steak. And while I’m sure that’s very nice on this salad, on the rare occasion that we have steak, I prefer the most tender cut I can find. And that would be a filet. Grilled to medium-rare. Sliced nice and thin. It was that thought alone that inspired this recipe post. Every bite of this Thai Beef Salad is a flavor explosion.

Southwest Skillet Corn
Southwest Skillet Corn. Come on fresh corn. I love you so. It really doesn’t matter to me how corn is prepared because I can’t think of a way I don’t love it. I’ve discovered over the past couple of years that roasting veggies like corn (or onions, jalapenos, poblanos, red peppers), over an open flame, intensifies their flavor and adds just a hint of smokiness. What a great way to give your favorite salsas and sides a little flavor boost.

Kefta Mkaouara {Moroccan Spicy Meatball & Tomato Tagine with Poached Eggs}
I wanted to share one more Winter Thyme Spice Exploration dish before I mentally checked into Spring. When I discovered Kefta Mkaouara, a traditional Moroccan tagine dish, it offered all the right components. Lovely spices, fresh herbs, wonderfully seasoned mini-meatballs, and poached eggs all slow cooked in glorious tomato and olive sauce in our new Tagine. Beautiful.

The first time we made African Chicken Peanut Stew was the day Shelby and I discovered Penzey’s Spices. I bought three spices that day, cumin seeds, coriander seeds, and cardamom seeds. You see, earlier that morning I had read my first ‘non-family/friend’ comment on Lemony Thyme. It’s hard to explain the feeling but I was a titch giddy.
