Moroccan Couscous Salad {Share the Love}
“It’s my pleasure.” What a lovely statement and I mean that so sincerely when it comes to cooking for my co-workers. Today was a lunch meeting for our fabulous Customer Service Team. I shared BBQ Turkey Burgers, Smoked Paprika Sweet Potato Chips and this Moroccan Couscous Salad which is just bursting with flavor.

Southwest Stuffed mini-Sweet Peppers {with Quinoa & Spicy Turkey Sausage}
These beautiful mini-Sweet Peppers were smiling at me as I strolled through the produce isle. How could I resist their vibrant ‘happy’ colors? When it’s January, and the tornado sirens are echoing in the distance and torrential rains are beating on the window, a little ray of sunshine for dinner seemed just right. So we kicked up our recipe with a little spice and created Southwest Stuffed mini-Sweet Peppers {with Quinoa & Spicy Turkey Sausage}.

Buffalo Wing Chicken Soup {with Orzo}
It’s soup weather in our neck of the woods AND the NFL Playoffs are under way. So when pondering What’s for Dinner, I came up with the combination of Buffalo Wings & Chicken Soup. Do you ever envision a recipe and think to yourself brilliant!, this is the most brilliant creation anyone has ever imagined. I will make it and they will name it after me. But just to be safe, let’s do a quick google search just to be sure someone else hadn’t already thought of it. For a fleeting moment this Buffalo Wing Chicken Soup was my chance for fame. Sadly, it’s not my time….let’s just say it’s been done…

Huevos Rancheros {Kind Of}
While these aren’t near authentic Huevos Rancheros, they are a nice twist on those wonderful Mexican Ranch Eggs. I tossed onion, zucchini, and cherry tomatoes in olive oil, oregano, salt and pepper and then roasted them for about 20 minutes until the onions were tender and the tomatoes began to burst. This mixture took the place of the traditional tomato-chili sauce and refried beans. You could substitute with whatever fresh veggies you have on hand, after all this is eat of the fridge/pantry week.

Spicy Green Sauce
Our new love of North African flavors has led us to discover a unique blend of spices and ingredients. This Spicy Green Sauce from City Kitchen,called chermoula offers just that. A slightly spicy pesto-like sauce that infuses the heat of serrano peppers, with the very bright and green flavors of lots of fresh cilantro and scallions, and finishes with a hint of tart lemon zest. We paired this sauce initially with our North African Chicken, but are certain it would be delicious with fish, beef, or lamb.

Cowboy Caviar & A Country Christmas Party
Whipped up a batch of Cowboy Caviar in honor of tonight’s Country Christmas themed Annual Company Party. I can not wait. While we work (and play) hard all throughout the year, the Christmas Party is a chance to spend an evening with my second family and their spouses. And inevitably make memories that will last us until next year’s party :) Did I mention, I can not wait!

Mexican Rice {Restaurant Style}
We just love sizzling Steak Fajitas served with all those delicious toppings. And nothing goes better with them than a side of Mexican Rice. I have read at least a dozen recipes for both Spanish and Mexican Rice in an attempt to find one as close to what we get from our favorite Cantina. I had no idea there was a difference between them, but from what I can tell while they both have tomatoes, Mexican rice also has onion and peppers, and is seasoned with cumin. Where Spanish rice uses saffron to get it’s orange-red color.

Cilantro Lime Shrimp & Avocado Tostadas {Weight Watchers}
It’s funny how one abundant ingredient can spark all kinds of recipe inspiration. For us, it’s what seems to be a never ending bag of Corn Tortillas taking up space in our fridge drawer. Thumbing through my cookbook rack yesterday, I came across my Weight Watchers cookbook and well, let’s just say we may need to visit a couple of these recipes heading into the holidays ;) Tonight we’ll start by adapting a WW Shrimp Tostadas recipe.

Chicken Enchiladas with Tomatillo Sauce {Enchiladas Verdes}
Found a fantastic and super easy recipe for tomatillo sauce which fit right into my plan. I’ve been wanting to make ‘Red’ Enchilada Sauce which we LOVE…but with an abundance of tomatillos in my fridge…green was the more practical approach. So Chicken Enchiladas with Tomatillo Sauce it is.

Cuban Tilapia {Third Coast Inspired}
Way back when, when I was much younger, I would frequent a neighborhood hole-in-the-wall kind of place every Friday night (there really were holes in the wall, each with a detailed story). This place was special. It had extreme character and characters, beautifully colorful people and hand-painted murals of them, free flowing spirits and free spirited bar tenders, bathroom walls that told stories through their ‘underwater’ paintings, Calypso music throughout and a patio with thatched umbrella tables overlooking…..the parking lot. And did I mention a kitchen manager that aimed to please. Oh yes, the later in the evening you hung in….the more creative he became. And that is where this Cuban Tilapia recipe was born.
