College Football Season is upon us. In fact, for our team it’s GAME DAY!! Since we’re a foodie family, Game Day is one more reason to create new dishes. Our inspiration comes from our opponents. Roasted Veggie Oven Hash {with Fried Eggs}
Hash is such a great way to use up the tail end of fresh veggies. I decided to oven roast my diced vegetables with just a little olive oil and seasonings vs. pan frying in butter. I’m taking baby steps towards Healthy Choices and Roasted Veggie Oven Hash with Fried Eggs keeps me right on track.

Chicken Enchiladas Soup
This week’s whole roasted chicken got bathed in rich Homemade Enchilada Sauce. Think BBQ Chicken, only basted with that wonderful chili and tomato based sauce. When it came out of the oven it was a sight to behold. We first enjoyed our chicken dinner which later became Chicken Enchiladas Soup.

Roasted Lobster & Corn Cake Grilled Cheese Sandwich
Exhale. Not sure how to spell that sound so do it with me…in through the nose out through the mouth. We’ve made it half way through April aka National Grilled Cheese Month and have proudly shared a unique grilled cheese sandwich each day on our Facebook page. The feedback has ranged from “Speechless” to “Girl. Giiiiiiirl. Yowza!!” to “I’m dreaming of Lobster Corn Chowder reconstructed into a grilled cheese.” That was too good to ignore.
