Chocolate Mousse {Adventures in Chocolate}
After a week of sharing and reminiscing about New England, I give you my most favorite dessert, inspired by the Monadnock Inn’s secret Chocolate Mousse recipe. As I recall, several years ago, their recipe earned Gourmet magazine’s Best Chocolate Mousse award.

Turkey Burgers {BBQ}
I have no excuse for not sharing this recipe with you before now. Our close friends and family know that Turkey Burgers with Sweet Potato Fries had always been a signature meal for us. However, somewhere around the time I got caught up in the What’s for Dinner craze (trying different recipes almost every night), our old faithful Turkey Burger got limited play time. It took sharing them at the office last week for me to realize how much I’ve missed them. And considering they are still being raved about, it’s time to give up the secret recipe.

The Jarlsberg BLT with Fried Egg
At our last family pot-luck gathering, my sister-in-law brought a crock full of the most glorious cheese dip. Jarlsberg Cheese Dip to be exact. She served it cold with a sliced baguette. I’m sure I never let it out of my sight or reach for the entire evening hour before it was devoured for it’s heavenly goodness. She shared that she had bought this tub of love at her local Kroger supermarket. I promptly sought out the closest Kroger and bought 2 tubs (plain and jalapeno) and a baguette.

Egg Drop Soup {Simple and Satisfying}
I’ve mentioned before how much I adore my hair stylist. And I think you also know by now that I LOVE to talk about food. So when I have my time in the salon chair with a captive audience…we talk about food. I’m so happy that she has become a Lemony Thyme follower. Through conversation, I’ve always known she was a ‘good eater’ (something my mom labeled you as, IF you were willing to try different cuisines, and of course clean your plate). Having said that, she’s young and still honing her own cooking skills. She shared that she loved the egg recipes I had been posting, but no matter how…

Huevos Rancheros {Kind Of}
While these aren’t near authentic Huevos Rancheros, they are a nice twist on those wonderful Mexican Ranch Eggs. I tossed onion, zucchini, and cherry tomatoes in olive oil, oregano, salt and pepper and then roasted them for about 20 minutes until the onions were tender and the tomatoes began to burst. This mixture took the place of the traditional tomato-chili sauce and refried beans. You could substitute with whatever fresh veggies you have on hand, after all this is eat of the fridge/pantry week.

Bacon, Egg, & Cheddar Cheese Biscuits {Sundays with Shelby}
It’s been too long since my last Sundays with Shelby outing. Today I’ve come up with a sure fire way to entice her for breakfast. We recently made Cheddar Buttermilk Biscuits {Red Lobster Inspired} and they were delicious on their own. We’re going to elevate the game by building a classic Bacon, Egg & Cheddar Cheese Biscuit out of them. Oh Shelby your mamma’s calling…

Salmon & Baked Eggs {Breakfast for Dinner}
Recipe inspiration for this one is quite simple…leftover salmon. Slow-Roasted Salmon with Tarragon and Citrus to be exact. Salmon is one of our favorite things to have for dinner. Whether we prepare the beautiful recipe above from Food & Wine or a little no fuss version, you can turn a nice big salmon fillet into a mouthwatering meal. It’s not often that there is any leftover but on this occasion we will take advantage of that for breakfast or wait is this dinner? Either way Salmon & Baked Eggs makes a delicious meal.

Zucchini Carbonara & Scrambled Eggs {Breakfast for Dinner}
When the abundant ingredient is zucchini….I’m happy. It is one of my favorite summer vegetables for certain and one I turn to all year long. In an effort to find more low-carb recipe options I came across this Zucchini Carbonara recipe on the site Whole Lifestyle Nutrition. What a fantastic way to enjoy the rich flavors of carbonara without the added carbs from pasta.

Mexican Breakfast with Pulled Pork & Eggs {Breakfast for Dinner}
When we have leftover pork roast, recipe ideas begin swirling in my head. Should we make Pozole, or Pork & Sweet Potato Hash, or Mexican Breakfast with Pulled Pork & Eggs. This time it’s going to be Mexican Breakfast for dinner.

Baked Eggs in Avocado {Breakfast for Dinner}
The first time I saw this Baked Eggs in Avocado dish on the Internet I was rather awe struck. It was genius to combine these two ingredients. What a wonderfully healthy breakfast option, packed with vitamins and protein, morning or night.
