Blueberry Goat Cheese Crostini {with Honey & Lemon} There something really wholesome about a beautiful bowl of fresh spinach and mixed greens sprinkled with the fruit of summer. That’s exactly how I’ve been enjoying my salads lately…with assorted berries, nuts & cheeses. Last week when I got to the end of several of my salad ingredients I was left with spinach, blueberries, and a bit of goat cheese. I drizzled that with balsamic vinaigrette and discovered my favorite salad of the summer.

We’ve lightly adapted it to use boneless chicken breasts, turkey sausages, and we include potatoes to round out the dish.

Turkey Piccata {with Mushroom, Spinach & Herb Couscous}
Jennie-O’s Ground Turkey, Italian Turkey Sausage, and All Natural Turkey Breast Tenderloins are all staples at our house, especially when we’re in Healthy Living mode…which is probably in order more often than not :) I originally made this Turkey Piccata recipe a couple years ago when I was a die-hard Weight Watchers girl. This dish has no lack of flavor but by simply exercising portion control AND measuring the added fats (as in measuring spoon) it can be a very figure friendly meal.

To begin, a seasoning mixture is made from melted butter, thinly sliced garlic & shallots, ground fennel seeds, fresh tarragon & lemony thyme, lemon & orange zest, and coarsely ground pepper.

Triple Olive Tapenade {with Roasted Red Pepper}
Leftover olives…what to do? what to do? A quick search found this fabulous tapenade recipe by Former Chef. The recipe calls for kalamata, green, and Californa ripe olives but you can use any combination you have on hand. The ripe olives add a nice balance to the punchy kalamatas. You’ll also want to add roasted red pepper. These can be bought in a jar but roasting them at home is super easy.

Blueberry & Mango Quinoa Salad with Lemony Basil Vinaigrette {Share the Love}
Today I had the pleasure of cooking for my work family. I believe if you’re going to call a mandatory meeting during the lunch hour, at minimum provide them a lunch made with love. And so we did. We had an Antipasto tray, Mexican Chicken Soup, Tomato Bread Salad, Caprese Salad, Melon Carpaccio, and Blueberry & Mango Quinoa Salad with Lemony Basil Vinaigrette. We had planned to have fresh baked cookies for dessert. Leftover lunch turned into 3 o’clock break snacks and cookies were declared ‘tomorrow’s’ treat.
