The Best Mediterranean Glory Bowl
Mediterranean Glory Bowl combines health benefits with flavorful roasted zucchini, pomegranate, avocado, feta, chicken sausage, and lime juice. Halloooo. We are officially heading into the holidays!! WoOp wHoO!! I love them. Starting with Halloween, then Thanksgiving, happiest at ChristmasThyme, wrapping up with a New Year’s Celebration. Our Mediterranean Glory Bowl is a seasonal recipe; pomegranate season. I have a sentimental love for pomegranate and to a fault may include them in one too many recipes. Thanks for hanging in there with me.

Fire Roasted Tomatillo Guacamole
Months and months ago when I was doing a little research on tomatillos for my Salsa Verde recipe, I ‘bookmarked’ a recipe for Fire Roasted Tomatillo Guacamole. Which translated means I wrote it on a piece of scrap paper and shoved it in my folder of recipes that I plan to make some day. Today’s the day for this crazy good recipe I found on Gilt Taste.

Jalapeño & Watermelon Margarita
Jalapeño Watermelon Margarita. One of my friends posted pictures on facebook yesterday of the margaritas she and her significant other were enjoying at a local cantina. Robin had a sweet looking Watermelon Margarita and Tim had a fiery Jalapeño Margarita. Instantly I craved a margarita. A blended margarita.

Pico de Gallo {Put The Lime In The Coconut}
I had a salad this week that stopped me in my eating tracks. There was a lot going on with said salad. Which made my mind drift from the company at the table. No disrespect, but whoa what a salad.

Restaurant-Style Salsa
Why have I waited so long to discover how easy AND inexpensive it is to make Restaurant-Style Salsa at home, by simply using your blender?! We love Fresh Tomato Salsa in the summer when the tomatoes are abundant and delicious. But frankly, I’m not willing to pay for over-priced, not all that tasty, supermarket tomatoes during the winter months. Instead we turn to our freezer where we’ve got Homemade Tomato Sauce and to our pantry where we always have canned tomatoes on hand.

Ceviche {with Halibut, Scallops & Shrimp}
We celebrated Shelby’s birthday last evening. When I asked her what she’d like for dinner she said “one of your amazing Ribeye steaks.” To which I gladly obliged. I wanted to come up with a fun and light appetizer to start us off. I remembered a time when Shelby and I met for lunch at a Mexican restaurant in town. As soon as we sat down she said “you’ve got to try their Ceviche.” I had no idea she shared my love for this chilled seafood salad.

Azalea Cocktail
The 13th hole at Augusta National aka The Masters Tournament is named Azalea. While the entire course is a thing of beauty, there’s something extra special about a green tucked up amongst a backdrop of blooming azaleas. Let that be the inspiration for this cocktail.

Thai Larb Salad
When life gives you Boston Bibb lettuce and chicken, the first thing that comes to mind are lettuce wraps. Our Chicken & Cashew Lettuce Wraps are a favorite but these Thai Larb Salad cups may have just inched them out in a popularity contest.

Thai Green Curry Baked Cod
We recently attended a wedding where we were treated to a most spectacular buffet of Thai food. The appetizer spread alone captivated our attention without end (check out my collage below). And when the dinner dishes were set out we approached them with the same enthusiasm. That’s fancy talk for multiple trips through the buffet line. While I was oh so happy with everything served, the Green Curry was still lingering in my mind three weeks later.
