According to an internet search, it seems to have been recreated at least a bazillion times. Here’s our version, based on ingredients already in our fridge and pantry.

I could give up Italian if I had to (even though I’d miss it) but I could NOT give up veggies. I just couldn’t do it.

Our Slow Braised Beef & Barley Soup began by slow roasting some short ribs that were taking up space in the freezer. Yes, I have once again vowed to stay out of the grocery store for at least a week. You could easily use leftover steak or roast beef or stew beef and achieve the same tender beefy goodness. The trick is to not be in a hurry. We brown our beef in a little oil before adding braising liquid to the soup pot, in this case we used beef broth. Throw in a bay leaf, thyme sprig, and fresh cracked pepper and let her go low and slow until the meat…

Turkey Tetrazzini {and a rambling on family}
Shelby and I recently had the pleasure of flying north to visit my brother, sister and their families for a few days. We, like many families, are separated by distance and life and the stuff that can get in the way. This trip was a chance for us to put all of that aside and just be together. It was wonderful. How does that relate to Turkey Tetrazzini? I’m about to tell you in a long winded way.
