Steak & Cheese Subs {with Onion, Mushrooms & Jalapeno} are the perfect week night meal. I held back from calling these Philly Cheesesteaks. I’ve never actually had an authentic Philly Cheesesteak but am sure they are worthy of more effort than it took to make these subs. These were super fast and so easy. Mushroom & Kale Quinoa Breakfast Bowl. It was 52 degrees in our bedroom this morning. Somehow opening a window ever so slightly seemed like a fine idea at bedtime. Brrrr. Crab Stuffed Mushrooms For our last several family gatherings we’ve decided our dinner menu would be a vast array of appetizers. We all, kids through Grammy and Granddaddy, love finger foods and this way no one is a slave to the kitchen. As each family comes through the door the assortment grows and a new round of grazing ensues. It’s fabulous.

Mushroom Thyme Haricot Verts. Haricot Verts, French for “green beans” are so wonderfully tender. They are absent of the strings that can make preparing green beans a chore and are easily recognized by their long slender shape. It’s such a treat to find these at the Farmers Markets and when I do I can’t help but buy pounds of them. Be prepared for a series of recipe posts incorporating my favorite of the green bean varieties.

Mushroom & Sage Whole Roasted Chicken. This week’s version of our whole roasted chicken was inspired by the most beautiful mushrooms and our gloriously happy sage plants. My first thought was to make a stuffing with crusty bread, fresh mushrooms, apples, sausage and sage. Then fill the cavity of this beautiful bird and let my taste buds dream of what was to come.

Italian Stuffed Mushrooms
I have always loved mushrooms. Raw. Cooked. Stuffed. In Stuffing. In fact, my very first (and only…to date) contribution to a cook book, was a little piece on Mushrooms. Mind you I was 13 and my culinary skills were….non-existent. I plan to share more about this fabulous family cookbook in the near future, but for now I’ll focus on these Italian Stuffed Mushrooms.

Veggie Frittata {Breakfast Burrito or Quesadilla}
“We can sleep til we get up.” That’s what we love about Saturday mornings. We did at least until we got a puppy. Now we “sleep til Scrappy Thyme gets up.” So while I lay in bed this morning waiting for her to call to us, I was thinking about breakfast. And how I might use up the mother load of leftover fresh salad ingredients that had taken over my fridge. That’s when I decided to make a Veggie Frittata.
