We’re so fortunate to have a wonderful Olive Oil & Vinegar Bar just minutes from home. Every time I walk into this store I’m treated to a new flavor pairing. My most recent addition to my collection (I think I’m up to about 10 different vinegar flavors) is Honey Ginger White Balsamic. This was the flavor base for my Honey Ginger Vinaigrette {with Shallot & Cilantro}. The shallot and cilantro offered a wonderful flavor balance to the slightly sweet honey ginger white balsamic. Baked Potato {with Garlic Roasted Broccoli & Cheddar Cheese}. While your Perfectly Baked Potato is cooking, why not roast some broccoli along side! Garlic Roasted Broccoli is a favorite side dish and so easy to make. Cut your head of broccoli into florets, lay them on a sheet of heavy duty aluminum foil. Add 3-4 cloves of minced garlic and a good drizzle of olive oil, then season with salt and pepper. Seal the foil making a packet.

Roasted Tomato & Mozzarella. I have seen some wonderful recipes lately for slow roasting tomatoes, like this one by The Foodie Physician. By cooking them low and slow you get a rich tomato flavor. They then can be used in dishes as you would sundried tomatoes. Delicious.

She started making it several years ago as she discovered a new passion for ‘real’ food. This recipe was something she could make completely from scratch. She actually took great pride in soaking the garbanzo beans overnight and getting up in the morning to make a batch before heading off to work. I remember always hoping she would leave a little behind for mom.
