Beef & Bean Chili
I will admit that I whipped up this Beef & Bean Chili for the sole purpose of picturing it….on a Baked Potato. That’s right. I’m about ready to share a big potato round-up I’ve been working on. Stay tuned…

Snow-Day Chicken Pot Pie
Snow-Day Chicken Pot Pie. We were snowed in again and completely made the best of it. Let me remind you we live in the sunny south, so snow days are few and far between. Stranded at home is my excuse to turn to my fridge/pantry for inspiration.

Shrimp Fried Farro
I had my heart set on Fried Rice. Having no rice in the house was just a minor set back. Introducing Shrimp Fried Farro. Welcome Winter Thyme 2014. Today is our second straight day of snowbound living for the second time this year. We live in the sunny south, where the peaches grow and our people are as sweet as our tea. We’re not accustomed to waking up to this, although I must say it’s quite beautiful.

Italian Sausage Soup {with Mushrooms, Onions & Peppers}
Italian Sausage Soup {with Mushrooms, Onions & Peppers}. Like many of our favorites, this recipe happened by accident. While making one of our go-to week night meals (Jennie-O Hot Italian Turkey Sausage with onions, peppers, mushrooms, and diced tomatoes) I came to realize my favorite part of the dish was the broth. The awe-mazing broth.

Moroccan Stuffed Turkey Tenderloin
When making Healthy Choices, one of the first things I add to our weekly dinner rotation is Jenny-O All Natural Turkey Tenderloins. This versatile white meat is actually slightly lower in fat and calories than boneless skinless chicken breasts. And their mild flavor lends itself to recipe creativity. Like this flavor packed colorful Moroccan Stuffed Turkey Tenderloin.

Christmas Leftover Chili

Savory Veggie & Herb Egg White Taquitos
Savory Veggie & Herb Egg White Taquitos. And Sunday Brunch or Monday lunch, straight from ingredients already in our fridge and pantry. Typically when I think of ‘Wraps’ I think of a sandwich alternative that consists of meats, cheeses or veggies that are rolled up into a convenient handheld package. Taquitos are that kind of wonderful.

Spinach Phyllo Triangles {Step-by-Step}
Spinach Phyllo Triangles. Glorious buttery crispy pockets of cheesy spinachy love. This was the first dish I learned to make using phyllo dough. There was some trial and error as I recall, but now this dish is quite routine for me. While it does take a little more time to prepare than some appetizers, it is well worth it. And your guests will love them too.
