Thai Pumpkin Soup. There was a time a few months a go that I heard there might be a shortage of canned pumpkin. Wait. A shortage of canned pumpkin? Seemed ridiculous. So I only bought 10 cans. Now I’m approaching the “Simplify” month(s) when I long to strip my pantry down to only the most essential ingredients. Some people cleanse, I purge the pantry. I have a few more cans of pumpkin to incorporate into dishes.

Our Slow Braised Beef & Barley Soup began by slow roasting some short ribs that were taking up space in the freezer. Yes, I have once again vowed to stay out of the grocery store for at least a week. You could easily use leftover steak or roast beef or stew beef and achieve the same tender beefy goodness. The trick is to not be in a hurry. We brown our beef in a little oil before adding braising liquid to the soup pot, in this case we used beef broth. Meatloaf {Moist & Delicious & Simple}
Moist & Delicious Meatloaf. Simplify. This word hangs over my kitchen sink and is more often than not… ignored. I love the concept of ‘less is more’ I just struggle when it comes to cooking with this in mind. Having said that, this meatloaf recipe is the perfect example of combining just a few simple ingredients to create magic. Maybe this should be called Magic Meatloaf.

I’ve never actually had an authentic Philly Cheesesteak but am sure they are worthy of more effort than it took to make these subs. These were super fast and so easy.
