When I started talking to friends about an Oktoberfest inspired dinner I got lots of suggestions on dishes I might make. I knew Wienerschnitzel and Spaetzle would be on the menu for certain and after mutliple requests for Red Cabbage our dinner was complete. German Sweet & Sour Red Cabbage.

Broccoli & Bacon Breakfast Burrito
It’s the weekend!!! Breakfast makes me happy! Discovering leftover steamed broccoli in the fridge inspires me… This morning it shall be Broccoli & Bacon Breakfast Burrito. Super simple and by adding a few fresh herbs and seasonings….super delicious! Of course bacon never hurt flavor either. After browning the bacon in a medium skillet and pouring off the drippings I sauteed onion slices until tender, then added a handful of steamed broccoli florets, fresh lemony thyme, a pinch of Mrs. Dash Garlic & Herb seasoning, and a little salt & pepper.

Green Bean Casserole {Deconstructed}
Finding these gorgeous Haricot Verts at the Farmers’ Market warranted a special recipe. Something just as fresh with flavor as they are. Hmm…green beans, first thing that came to mind is Green Bean Casserole. Not envisioning the from a can variety but instead a bed of creamy mushroom & thyme sauce, topped with these vibrant green beans, sprinkled with crispy onions and shaved Parmesan cheese. Now that could be amazing.

Basic Tomato Sauce
There are a few prepackaged pantry staples I can’t live without. Canned tomatoes would definitely be one of them (at least until I learn how to can fresh tomatoes next summer). And once I learned how to make a Basic Tomato Sauce from scratch, dried pasta became another pantry staple we always have on hand. This sauce is intended to be ‘basic’ and is a wonderful base to build upon.
