Rustic Potato Chowder {with Bacon}
Rustic Potato Chowder with Bacon. After one bite I knew we would have to recreate it for Lemony Thyme. It’s hearty enough to enjoy as a meal and easy enough to become a weeknight favorite. I was just having a conversation with a friend about how bacon makes everything better. I’ve shared before that we keep our bacon in the freezer. That way we always have some on hand and it’s easy to cut into pieces that cook quickly. Bacon adds wonderful flavor to this chowder, but feel free to omit for a vegetarian version. Leftover cooked new potatoes also contributed to the minimal effort required.

Italian Sausage Stuffed Zucchini {Lightened Up}
Easy week night meals that are packed with fresh flavorful ingredients. That was my mission. Italian Sausage Stuffed Zucchini boats not only made a great dinner, but they reheated beautifully for lunch the next day.

Chicken Noodle Soup with Homemade Egg Noodles
The cold weather season triggers something special in the brain. Whirling twirling ideas of how to make our favorite seasonal dishes even better than last year. Noooo I’m not referring to pumpkin recipes :) For me that something special would be soups. All kinds of glorious soups, of both the brothy and creamy persuasion. I took a good hard look at our Soups, Stews & Chilis category to see where there might be a void.

Chicken & Chorizo Chili
I spent this past weekend organizing my kitchen. Starting with the spice cabinet, moving on to the pantry, followed by my dishes cupboard and ending with the freezer. I’m sure everyone has their problem areas but since I began food blogging all of mine have blown up. Hey now! ;-)

Smoky Chicken & Spinach Stuffed Shells
Sometimes you need a deep dish of comfort. No questions asked. Bring on the comfort food. That’s what our Smoky Chicken & Spinach Stuffed Shells were intended to be. And on that day they delivered.

Roasted Veggie Pot Pie {with Herbed Biscuit Crust}
Someday I think I’d like to do an entire recipe series on ‘How to make this from that.’ In other words, how to enjoy dinner on day one, then turn the leftovers into a completely new meal (or two) the following days. Our Roasted Veggie Pot Pie {with Herbed Biscuit Crust} is simply Roasted Veggie & White Bean Chowder with a heavenly layer of comfort baked on top.

Turkey Divan Soup {with Gnocchi & Parmesan Mushrooms}
We got a new pellet smoker grill and have had that bad boy fired up every weekend since, which means for the most part I’ve had weekends off from cooking. At least cooking out of need vs. for fun. Smoked turkey breast and the heavenly broth that followed was the recipe inspiration for this Turkey Divan Soup.

Mexican Tamale Pie
I’ve been wanting to recreate my favorite Mexican Tamale Pie since about the moment I began sharing recipes on Lemony Thyme. Which also happens to be when I realized that the most important part of cooking isn’t the recipe, it’s the ingredients.

Marinara Sauce {with Fresh Tomatoes}
I have been on a Marinara Sauce kick these past couple of weeks. I call it a kick because I’m still a bit shocked that we are becoming quite the homesteaders. Well no we didn’t grow these tomatoes, but we did roast them, turn them into sauce and freeze them for the winter. That’s a long way from opening up a jar of our favorite sauce.

Roasted Sweet Potato & Butternut Squash {with Crispy Sage & Bacon}
I tried to publish this recipe last night but I was struggling and grasping for words. Not that Roasted Sweet Potato & Butternut Squash {with Crispy Sage & Bacon} is complicated or difficult to explain, it’s just that I made it for some friends of mine who frankly have been to hell and back over the past six weeks. Preparing this dish evoked emotion, something I feel has been lacking as of late in my cooking and subsequent blog posts.
