The beautiful thing is the creamy came from the white beans not cream or butter. That puts this soup squarely in our Healthy Choices category.

College Football Season is upon us. In fact, for our team it’s GAME DAY!! Since we’re a foodie family, Game Day is one more reason to create new dishes. Our inspiration comes from our opponents. Yes, we like to envision our rivals as a meal. For example if we’re playing the Arkansas Razorbacks….we might have a meal of Braised Pork. This has been my Summer of Jam. In years past I had avoided making jams and jellies simply due to my lack of understanding of the canning process. However, once I discovered how easy it was to make skillet jams the creative juices began to flow. Strawberry Jalapeno and Peach Jalapeno Skillet Jams gave me the confidence to take on Tomato Bacon Jam.

Roasted Veggie Oven Hash {with Fried Eggs}

Roasted Spring Vegetables I was so pleasantly surprised to learn how wonderful radishes are when oven roasted. It never even occurred to me to cook them. To me radishes were only served as part of a veggie tray. Growing up, I remember mom making ‘radish roses’ and serving them on a nibble tray during the cocktail hour. I tried to like them.
