Buffalo Shrimp
We were gifted 7 pounds of fresh-off-the-boat Georgia shrimp a month or two back (thanks to my mom & dad in-law). I froze them in one pound packs so they would thaw quickly when we had a shrimp hankering. On this particular day, I couldn’t get enough of these Buffalo Shrimp. They were too tasty not to share.

Broccoli Cheese Casserole {Weight Watchers}
Each winter I find myself gravitating towards healthier recipe options. Likely due to overeating during the holidays and less outdoor activity than during the warmer months. This lightened up Broccoli Cheese Casserole is light on calories but just as yummy as any full fat version I’ve had in the past.

Parmesan Crusted Homemade Fish Sticks
Parmesan Crusted Homemade Fish Sticks I grew up in a very small New England town in southern New Hampshire. There was a large Catholic population which meant every Friday night was fish night in most households. And while some of my friends grumbled, I begged to be invited for dinner in hopes they’d be serving fish sticks and French fries. Loved them. Please tell me I’m not alone on this one.

Italian Stuffed Mushrooms
I have always loved mushrooms. Raw. Cooked. Stuffed. In Stuffing. In fact, my very first (and only…to date) contribution to a cook book, was a little piece on Mushrooms. Mind you I was 13 and my culinary skills were….non-existent. I plan to share more about this fabulous family cookbook in the near future, but for now I’ll focus on these Italian Stuffed Mushrooms.
